Waste Liquid from sugarcane molasses alcoholic ferment is a high concentration organic waste,which is high in quantity and hard to disposal.In order to reduce the pollution of alcohol waste water,it is necessary to do some research work on high concentration fermente to reduce the quantity of the waste water.According to the metabolism pathway of yeast, this article focus on the study of alcohol high gravity fermentation factors such as: the screening of high production strains, optimum alcohol fermentation condition and restrain factors, batch-add sugar technology and waste water recycle. The main contents and study results of this paper are following:1. In order to improve the ability to enduring alcohol, we should have a directional domestication of the ability to Al. And after 17 generation domestication, the wine production rate of yeast has been improved to 9.2%, we name it A7. I as well explore other problems such as: adding oleic acid into ferment liquid and the improvement conditions that TW80 to the enduring alcohol ability of yeast. Test proves that the ability have been improve to 4.8% by adding 0.2% oleic acid into ferment liquid, and the wine production rate would be improve 3.6% by adding.2. Having an ultraviolet mutagenesis to yeast, and after the first screen, we will get the object strain GXZT at the second screen. Compare to the original strain, the variation strain GXZT will improve the ferment wine production rate 27.7% at 30°Bx. The most suitable ferment condition for variation fungus GXZT: temperature is 35℃, inoculation number is 6%, ferment PH is 5.0, the temperature of variation fungus is 5°C higher than that of parental plant. The ferment time is about 60 hours, nearly the same to initial strain.3. Studying the influence, which metabolite organic acid and glycerin affect to fermentation.
