Resently, pollen has been paid great attention as an eminent full nutrition food all over the world. In our country, the basic research and applicative research on this field have been completely and deeply developed for many years, which has acquired many pleased harvest, even some aspects have entered leading edge in the international research. The pollen research is beginning from different angles,different subjects, different domains to pollen resource, effective constituent, component, even health protections medicine principle, medicine effect and ampliative application. It also include pollenproducing technique, processing technics, new product research......All have achievedmuch harvest.Maize pollen is one of the biggest output pollen in china, and been paid great attention to. It had already reported the collections drynesss storage, analysis of nutrition and research of function factory from 80s. The reports fastened on its functions, such as immunocompetences inhibiting tumor etc, but seldom on its extractions isolation, identification, purifications the components and constructions features. So, the study use polysaccharide abstraction depuration technique, instrumental analysis technique, race hygiene conservancy food function evaluate method, modern medicine analysis technique and so on, having done deep systemic research on the extractions isolations identifications purification of RPPM and the components and constructions features. Then estimating the antioxidation research of RPPM, which give it the foundation for the further research.1 , through the research of RPPM abstraction and purification, we found that RPPM can be got by water extracting and alcohol precipitating, chloroform degreasing, eliminating albumen with the method of Sevage, dialysis and freeze drying from raisin, the rate is 8%. We got three fractions through the alcohol: PPMAs PPMB and PPMC. They are all yellowy floccule. Calculated with the rough polysaccharides as initiative material, the rates of three fractions as follows: 18.83%, 15.36%,60.28%. When we take PPMC through the Sephadex A-25 chromatography, we got one fractions PPMC-1, the rate is 77%. It shows that the PPMC-1 is homogeneous polysaccharide through Sephadex G-200 arbitration, acryl amide gel electrophoresis arbitration.2, Through the amino acid composition analysis, PPMC-1 contain abundant amino acid, such as Phe, Asp, Arg, Ser, Thr etc 16 kinds amino acide. The amino acid total content is 22.17%. The content of Lyss Asp and Glu are oppositely higher than others, which of Met and Cys are lower.According to Gas Chromatography and infra-red spectra analysis, PPMC-1 contains glucose, xylose and rhamnose, which mole compare is: 7.08:5.53:1, polysaccharide configuration may have furan and pyran. And according to ultraviolet and infra-red spectra analysis, PPMC-1 contains protein.3n The antioxidant ability of RPPM in vitro were studied. According to scavenging activities on hydroxyl radical, the differences between IC50 of the RPPM fractions are small; the same result as the experimentation of inhibitory activities. RPPM had scavenging effects on hydroxyl radical and superoxide anion radical; had the inhibiting effects on Iipid peroxidation of liver homogenate in vitro. It also could protect liver from peroxidation induced by Fe2+ or H2O2, inhibit the mitochondria swelling and hemolysis of red blood cells. In different antioxidant systems, RPPM had different antioxidant ability.
