The cultivated species of beet can be divided into four varieties: sugar beet,food beet,forage beet and leaf beet,among which sugar beet,food beet and forage beet are mainly used for root tuber.In this study,conventional physical and chemical analysis and non-targeted metabonomics were used to analyze the nutritional components and metabolites of three types of sugar beet,in order to provide basic data for the further development of sugar beet germplasm resources.The main contents and conclusions are as follows:1.1.The mineral elements in root tubers of various test materials of sugar beet were compared and analyzed,and there were no significant differences among the three cultivars,but significant differences among the three cultivars.The results showed that the contents of potassium,sodium,calcium,magnesium,iron and boron were the highest in edible beet and the lowest in forage beet.Copper,zinc,manganese content comparison:edible beet content is the highest,sugar beet content is the lowest;The molybdenum content of sugar beet was the highest while sugar beet was the lowest.2.The protein content in root tuber of beet was compared and analyzed,and there was significant difference between each variety,which was shown as feeding beet > for eating beet > sugar.The sucrose and reducing sugar contents in root tuber of beet were compared and analyzed.The sucrose content among varieties showed that the sugar beet >was used for sugar beet > was used for feeding beet > was used for feeding beet > was used for feeding beet > was used for eating beet.The crude fat content in the root tuber of beet was compared and analyzed.Among varieties,the crude fat content in the root tuber of beet > sugar beet > was used for feeding beet.Among them,the total crude fat content of edible beet ZT001522 was 0.67 g /100 g,and the crude fat content varied from0.25 to 0.67 g /100 g compared with other materials.3.A total of 2064 sugar beet metabolites were identified by non-targeted metabolomics analysis of three cultivated sugar beet metabolites.Among them,1328 metabolites with clear chemical names were identified,and a total of 154 reliable differential metabolites were determined by pairwise comparison.36 different metabolites were identified between sugar beet and food beet,which were distributed in 32 metabolic pathways.Nineteen different metabolites were identified in 35 metabolic pathways between food beet and forage beet.Eighty-nine different metabolites were identified in50 metabolic pathways between sugar beet and forage beet.4.The results showed that the content of malt alkaloid in sugar beet was 42.73 times higher than that in sugar beet.The content of cinnamic acid and its derivative,o-coumaric acid,was 7.96 times higher than that in sugar beet.The content of spermidine in forage beet is 3.87 times that of edible beet,the content of folic acid in edible beet is 2.02 times that of forage beet,and the content of hydroxycinnamic acid in edible beet is 5.07 times that of forage beet.Amino acids in feed beet are higher than sugar beet.
