With the development of market economy,the pressure and competition of catering industry are facing more and more.Increasing food and beverage costs,has affected the profitability of enterprises and sustainable development.Facing increasingly fierce competitive environment,how to control the cost of food and beverage enterprises,especially the cost of ingredients,has become particularly important.Cestlavie Chinese and Western restaurant as a newly established near catering enterprises,there are many problems in food cost control management,however,enterprises want to gain a firm foothold in the fierce competition in the market,we must have to find and solve the problem,so as to remain unbeaten.In this paper,Cestlavie Chinese and Western restaurant as the research object,the ingredients of the circulation throughout the analysis.From these aspects to analyze Cestlavie Chinese and Western restaurant cost control status respectively:food procurement,storage sector,production sector analysis,to find the problems in food cost control.In the purchase link does not exist with the raw material purchasing plan,food acceptance strictly,purchasing rights of supervision is not enough,a single vendor and other issues.The storage part of the existence of the problem of inventory management,warehouse shelves placed haphazard,warehouse does not set the ledger,the establishment has not reported loss system.In the food production chain has not formulated food production plan,the production process is not standardized,low rate,kitchen and other departments of communication and cooperation such as poor comprehensive utilization of raw materials.Then,aiming at the existing problems,put forward the main optimization measures to optimize the cost control of food and beverage enterprises.With links to purchase on the establishment of internal control system in the restaurant,the restaurant food,fine management,reduce the operational aspects of the unnecessary consumption of and control food consumption,ensure the ingredients of rationality,effectively reduce the restaurant food costs,and improve the restaurant’s profits.We also hope that through Cestlavie Chinese and Western restaurant food cost control research and other catering enterprises in the food cost control management provide valuable reference.
