| Tea soluble dietary fiber (SDF) and insoluble dietary fiber (IDF) were prepared using the enzymatic method. Their composition and antioxidant activity were studied. The correlation between the component and antioxidant activity of tea insoluble dietary fiber was evaluated. The results were as follows:1ã€Months, varieties and different tenderness significantly affected the contents of tea SDF and IDF. The extraction rates of tea SDF and IDF in November were the highest among months. The rates were 35.38%,2.13%, respectively. The extraction rates of tea SDF and IDF from Wuniuzao were the highest,34.77%,1.99%, respectively. The extraction rates of tea SDF and IDF in a bud and six leaf were the highest,32.99%,1.94%, respectively.2ã€Months significantly affected the component contents of tea SDF and IDF. The contents of pectin, hemicellulose of tea SDF in November were respectively the highest, the rates were 44.21%,1.32%, successively; While the contents of flavonoids and total phenol in May were the highest, the rates were 11.49%,5.14%. The contents of lignin, cellulose, hemicellulose of tea IDF in November were respectively the highest, the rates were 22.23%,26.20% and 15.59%, successively; while the contents of flavonoids and total phenol in May were the highest, the rates were 7.96%,2.42%.Different tenderness significantly affected the component contents of tea SDF and IDF. The contents of pectin, hemicellulose of tea SDF in a bud and six leaf were respectively the highest, the rates were 39.93%,1.07%, successively; while the contents of flavonoids and total phenol were the highest in a bud and one leaf, the rates were 1.40%,5.28%. The contents of lignin, cellulose, hemicellulose of tea IDF in a bud and six leaf were respectively the highest, the rates were 21.00%,23.25%,15.31%, successively; while the contents of flavonoids and total phenol were the highest in a bud and one leaf, the rates were9.07%,5.28%.Varieties significantly affected the component contents of tea SDF and IDF. The contents of pectin, flavonoids, total phenolic of tea SDF from Fudingdahao were respectively the highest, the rates were 41.53%,11.54% and 5.80%, successively; while the contents of hemicellulose from Tieguanyin were the highest, the rates was 1.31%.The contents of total phenolic and cellulose of tea IDF from Taicha12 were respectively the highest, the rates were 2.89%,24.12%, successively; while the content of lignin from Wuniuzao was the highest, the rates was 25.13%, the content of Flavonoids from Tieguanyin was the highest, the rates was 9.46%, the content of hemicellulose from Pingyangtezao was the highest, the rates was 25.13%.3ã€Months significantly affected antioxidant activity of tea DF. The total antioxidant capacity of tea SDF and its scavenging activity of superoxide anion, hydroxy radical, DPPH radical in May were respectively the highest, the rates were 3.97 U/mg,67.03%, 85.53% and 80.44%, successively; while the total antioxidant capacity of tea IDF and its scavenging activity of superoxide anion, hydroxy radical, DPPH radical were 3.11 U/mg, 64.64%,61.01%and 78.60%.Different tenderness affected antioxidant activity of tea DF. The total antioxidant capacity of tea SDF and its scavenging activity of superoxide anion, hydroxy radical, DPPH radical in a bud and one leaf were respectively the highest, the rates were 2.88 U/mg,62.07%,70.44% and 75.76%, successively; while the total antioxidant capacity of tea IDF and its scavenging activity of superoxide anion, hydroxy radical, DPPH radical were 2.73 U/mg,61.53%,55.97% and 78.56%.Varieties affected antioxidant activity of tea DF. The hydroxy radical scavenging activity of tea soluble dietary fiber and insoluble dietary fiber from Taicha 12 were respectively the highest, the rates were 68.06%,63.21%, successively. The superoxide anion scavenging activity of tea SDF and tea IDF from Fuyun 6 were respectively the highest, the rates were 77.99%,1.69%, successively. The DPPH radical scavenging activity of tea SDF from Fuyundahao and tea IDF from Fuyun 6 were respectively the highest, the rates were 80.60%,80.90%, successively. The total antioxidant capacity of tea SDF from Fudingdahao and IDF from Tieguanyin were respectively the highest, the rates were 3.81 U/mg,3.20 U/mg, successively. |
