| In recent years, the issue of quality and safety of food and animal products has aroused great attention of the society. Among them, the quality and safety issues of halal beef and mutton and meat products are also increasingly prominent. In this context, it is important to build the quality and safety traceability platform of halal beef and mutton and meat products in Ningxia, and it is significant to study the application of the critical control points of hazards and Muslim taboo and identify technology in halal beef and mutton and meat products in breeding, processing, transport and sales. These can effectively promote the sustainable development of the halal beef and mutton industries, eliminate the unsafe factors in the halal beef and mutton production, and solve the people’s livelihood issues of30million Muslim masses.The main work and innovations of this paper are as following:(1) On the basis of the advanced experience of domestic and international food traceability, through the investigation and research of the three halal food enterprises, the quality and safety traceability platform of halal beef and mutton and meat products was built. The quality and safety traceability platform covering the halal livestock traceability inquiry, technology integration, information dissemination and other functions, includes eight function modules, seven service modules, a consumer trace query entrance, and a traceability module. It is useful for the development of the halal beef and mutton industry in Ningxia.(2) Through the analysis of halal beef and mutton and their industry chain, and the HACCP theory, the critical collection data of breeding, slaughtering, processing and transportation were determined. The identity technology needed for the data collection was also established.(3) The barcode technology and RFID technology were used in the halal beef and mutton and meat products traceability system. The cattle and sheep were identified using the "ear mark" based on the RFID technology in the breeding stage. The carcass or products were identified using the "ear mark+barcode" in other stages. In this way, it could ensure the integrity of information traceability and the effectiveness of information transfer and exchange among every stage. It also provides technical support for the halal beef and mutton and the uniqueness of the products coding. |
