| With the fresh pentaphyllum, hawthorn fruit as the main raw material,this article studiedon the manufacturing of composite beverage. By using multiple soaking methods,thegynostemma fluid was extracted at optimum temperature--70℃within80mins,which then wascombined with water in a ratio of1:80,at pH6, whereas the Hawthorn fluid was extractedthrough enzymic method at40℃within120mins,in which pectinase was added to Hawthornpulp in a mass ratio of0.02%. After that,mixed the50%gynostemma fluid and Hawthorn fluid ina ratio of8:2. Additionally,5%maltitol,0.05%Citric scid,0.4%sodium carboxymethylcellulose and0.6%propylene glycol alginate were applied as compound stabilizer while0.6g/Kgpotassium sorbate was used as antiseptic substance. Finally it was sterilized in a way of dampand hot, and deaerated by heating. The novel beverage we developed had crystal clear Colourand lustre, pleasant odour, plentiful nutrition, mild taste and stable property,without anyadditional pigment. It is a health drink with low energy and low calory that suitable for youngand old. |
