Blueberries are perennial flowering plants with indigo-colored berries from the section Cyanococcus within the genus Vaccinium, which have a diverse range of micronutrients, with moderate levels of the essential dietary mineral manganese, vitamin C, vitamin K and high levels of anthocyanins and flavonoids, which are under preliminary research for their potential antioxidant physiological function in reducing risks of diseases such as cardiovascular, stroke, inflammation and cancer. In order to utilize anthocyanin source in blueberry, extraction、purification and antioxidant technology of anthocyanins from blueberry were studied in this paper, the conclusions were as follows:1、The optimum extraction technology through the response surface plot were as follows:extraction temperature44℃, extraction time120min, the ratio of sample to solvent (W/V)1:24. The absorbance value was0.0832, anthocyanins content was334.51mg/100g, and recovery rate was93.71%.Under this condition, ultrasonic-assisted extraction can sharply shorten the time to50min.2、Among5kinds of macroporous resins, HP2MGL resins have better capabilities of absorption and desorption to purify crude blueberry anthocyanins. The conditions of static absorption and desorption of blueberry anthocyanins were that the time of absorption and desorption in balance was3h, pH value was3.0, anthocyanins concentration was1.0mg/mL, and70%ethanol was regarded as the elution solvent.3、Based on the data of static absorption and desorption of blueberry anthocyanins, The optimum conditions of dynamic absorption and desorption of blueberry were as follows:flow rate of absorption was3mL/min,that of desorption was2mL/min,the elution solvent was4BV (bed volume)70%ethanol. In those conditions, the anthocyanins produced by this technological process were purplish dark powder, the colour value was58.96, and the recovery rate was88.53%. 4、In this experiment, The result of studying antioxidant capacity of anthocyanin from blueberry showed:anthocyanins whether was from crude products or purified products had stronge antioxidant capacity that can clear DPPH· scavenging,·OH scavenging and O2-·scavenging. The DPPH·scavenging capacity:anthocyanins purified products> control Vc> anthocyanins crude products. The·OH scavenging capacity:anthocyanins purified products> control Vc> anthocyanins crude products. The O2-·scavenging capacity of control Vc and anthocyanins crude products were stronger dramatically than anthocyanins purified products.5、In the range of experimental anthocyanins concentration, The maximum clearance rate of DPPH`scavenging capacity、·OH scavenging capacity and O2-·scavenging capacity is88.76%、87.98%and82.11%respectively.
