De Zhou Braised chicken is a local dishes which has three hundred years. It originated in the Ming dynasty, and founded in the Qing dynasty. Emperor Kang Xi had praised it for "the Chinese first chicken". The Beijing-Hangzhou canal of De Zhou section was navigated in Ming and Qing Dynasties, and the railway from Tianjin to Pu Kou was opened in late Qing Dynasty. All these factors promoted the spread of De Zhou Braised chicken. After the found of the People’s Republic of China, the inheritance and protection of De Zhou chicken get attention from the government. The chicken makers were brought into the State food company after the Public-private partnership. Through innovating the technique, increased the production and extended the spreading scope of De Zhou chicken. By means of holding the chicken festival activities, more and more people learn the history of De Zhou chicken and this city. The built of the museum, provided great convenience for the collection and display of the historical material.The production technique of De Zhou Chicken is a intangible cultural heritage, which is the core of the braised chicken culture. Now, a lot of work has done to promote the heritage and protection of De Zhou braised chicken. However, it still has many problems, which need to improve. Such as the problems of lacking brand protection and the supervision mechanism. The shortage of people who learn the traditional construction of De Zhou chicken. And the traditional construction of the De Zhou chicken has disappeared gradually. The research of De Zhou chicken culture is limited. This article uses the method of combining the theory and the case, through analysis the cultural ecology environment of De Zhou chicken, research the spread of it through the angel of space-time. Analysis the problem exists in the development of De Zhou chicken. And then put forward the methods which were benefited for the cultural heritage and protection, drove out the conclusion that:culture is the soul of De Zhou chicken.This article use intangible cultural heritage as a starting point. First, analysis the cultural of De Zhou chicken through the angle of food cultural, include the environment it produced, the meaning of braised chicken, and the value of it. The second part analyses the heritage and the spread of De Zhou chicken from the vertical and horizontal angle, give readers completed and clear understanding of the breast chicken culture. The third part, based on the protection of article use intangible cultural, analysis the shortage in De Zhou breast chicken’protection and use, and then, braised some suggestion for the development of breast chicken in the theoretical and practical levels.
