With the improvement of the brewery industry, the production had reached30million per year in China. Although the water consumption for one unit was reduced from1Ot to4t, the concentration of organic compounds was large. A brewery industry of HuaRun company in YiLan adopted advanced "anaerobic-aerobic" wastewater treatment process. The treated effluent of brewery wastewater had achieved "discharge standards for the beer industry"(GB19821-2005) discharge requirements after3months operation.In this paper, the production of beer, the sources and the characteristics of the wastewater and the development of brewery wastewater treatment technology were introduced firstly. The merits of "anaerobic" process were also discussed. This paper was focused on the operation analysis of "anaerobic-aerobic "in brewery wastewater treatment. The same process was carried out in the laboratory scales. Those results were used for the design of real brewery wastewater treatment. Finally, this technology was applied in a brewery industry of HuaRun company in YiLan. Several tritical factors which affect operation were also discussed.Brewery wastewater contains high organic matter. However, this kind of wastewater was readily to biodegrade by activated sludge. Due to high organic compounds of the brewery wastewater, oxygen activated sludge process would lead to high energy consumption, large amount of sludge production and other disadvantages." anaerobic-aerobic" treatment process was used for a brewery industry of HuaRun company in YiLan, of which the advantages were small footprint of fields, short startup time, well impacted load resistance, stable operation ability, energy saving and less sludge production. The seed sludge of anaerobic reactor was collected from medical industry in ShanDong. The seed sludge of biological contact oxidation ditch was collected from municipal plant.15days later, the biofilm was appeared on the fillers of aerobic reactor. Anaerobic granular sludge of1-2mmm was appeared in the anaerobic reactor after30days; The total COD removal rate reached98%after90days. The removal of COD in the anaerobic and aerobic processes reached about80%and90%, respectively. After operated for90days, the effluent quality met the effluent standards.
