Kelp is a natural healthy food and has a long history of consumption in China. Kelp is rich in a variety of biologically active substances. It is not only a vegetable, but also is an important industrial raw materials. At present, China has been formed the industry to product alginate, mannitol, iodine. However, there are about 2/3 of the seaweed has not been used. The seaweed industry is only 30% utilization, It not only wasting a lot of natural resources, but also brought a series of environmental problems. How to improve the utilization of seaweed, we have more and more concern about this issue. Analysis can be shown, the main remaining components of Kelp is dietary fiber. On the other hand, lack of dietary fiber had induced many major diseases. under this context , studying and developing the dietary fiber from the residue of Kelp has become an important research topic.Considering these two points in this paper, ,We starting from the seaweed raw materials, and find a new industrialization way to use Kelp, Kelp firstly been flooded by water, secondly hydrolysis it by ferment , then we extract the polysaccharides and iodine for making functional beverages production. We analysis the residue and prepare dietary fiber, then we use the dietary fiber to improve the activity of the gastrointestinal tract. On this basis ,we add Xylo-oligosaccharide in it to prepare a better activity dietary fiber compositeWe can make the extraction of iodine as high as 93.5μg/100ml from Kelp though water flooding and hydrolysis process. The extraction solution content total polysaccharides as high as 15.27 percent, the utilization rate of Kelp is 37.8%. This method can effectively extracted parts of Kelp functional material. This method is obviously higher than that of several other extraction methods. The color is relatively shallow and easy to decolorization. So this method is selected as the extraction of seaweed utilization methods, the solution after extraction is rich in iodine, more carbohydrate ingredients, do not add the acid-base chemical composition, shallow color, So iodine can be directly used for feature-rich beverages and other functional foods.We have made a nutrient analysis of the residue of kelp ,dietary fiber content : 51.13%, protein content :16.14%. Amino acid analysis showed that the residue of kelp is a very good source of protein. So we determined the dietary fiber and protein as the two directions of using the kelp residue. We investigated the impact of temperature, H202 concentration, decolorization time on the dietary fiber color. The best Temperature is 90℃, H202 concentration is 12%, decolorization time is 120min, liquid ratio is 1:15, these made yellowish of kelp dietary fiber . which is the most shallow color under these conditions.Nutrient composition analysis showed that dietary fiber in seaweed dietary fiber content as high as 74.76 %, 1.56 percent protein, 21.18% ash. The water holding capacity of kelp dietary fiber powder has reached 859 %, the swelling reached 12.3ml/g; the greatest bound volume of Cd2+,Cu2+, pb2+ reached 37.27μmol/g, 29.6μmol/g, 31.57μmol/g; in pH2.0 and pH7.0, the N02-adsorption were 1.42mg / g and 1.04mg / g, physical and chemical properties showing that the dietary fiber had very good quality .According to"Technical standards for testing & assessment of health food (2003)", the regulative functions of Dietary Fiber of kelp on defecating function in mice were studied. It can decrease the reproduction of Clostridium perfringens in mice. The product could increase the percentage of propellant in small intestine of constipated model mice distinctly, the time of defecation of first black feces were significant shorten, and the number and weight of feces within 5h were significant increased, compared with the control group. All the results showed that the dietary fiber complex has function of defecating function in mice.We mixed Xylo-oligosaccharides and dietary fiber of kelp together,then we test the activity of the Dietary Fiber Complex.According to"Technical standards for testing & assessment of health food (2003)", the regulative functions of Dietary Fiber Complex on Gastrointestinal Function in mice were studied. The results showed that this product could regulate the intestinal flora and improve the reproduction of bifidobactacteria and lactobacillus, It also could decrease the reproduction of Clostridium perfringens in mice. The product could increase the percentage of propellant in small intestine of constipated model mice distinctly, the time of defecation of first black feces were significant shorten, and the number and weight of feces within 5h were significant increased, compared with the control group. All the results showed that the dietary fiber complex has function of improving Gastrointestinal Function in mice.
