The demand and production situation of caramel pigment which the tortoise deer wine of Yedao needs were introduced, based on the analyze and research of the production situation of caramel pigment, the preparation of caramel pigment by extrusion was proposed to replace the old process for the problems of serious pollution, high energy consumption, large area occupied and low automation and so on.The producing principles of the preparation of caramel pigment by extrusion were analyzed. Based on the analyze of the Maillard Reaction, Caramelization and Oxidation of coking process, the material rheology, apparent viscosity and the mass transfer process of the extrusion processing were studied .Using the Mesh Superposition Technique provided by the package POLYFLOW simulated the three-dimensional isothermal flows in the screws of the melt pumping section. Pressure, velocity, viscosity and shear rate distribution profiles of the flow field were analyzed and discussed, in order to understand the extrusion processing. According to the flow field analysis of different rotate speed, the variations of every physical quantity of flow field and pressure and torque which the screws beared are available. The simulation results are available for other research.The technology and processing for the preparation of the caramel pigment by extrusion from saccharose were discussed.The color ratio, water-solubility and taste of caramel pigment influenced by the screw rotate speed and the barrel temperature were studied. When the rotate speed was up, the color ratio of caramel pigment increased. If the speed continued to increase, the color ratio decreased distinctly; with the increase of the barrel temperature, the color ratio increased, but its water-solubility reduces, and the taste was poor with very serious bitter taste, the coordination with the wine smell and medicinal aroma was poor. Combined with the experiment and the practical production, the technological process was proposed which taked the preparation of the caramel pigment by extrusion as core, producing the liquid caramel pigment which the tortoise deer wine of Yedao needs, to solve the problems of serious pollution and highe energy consumption which is existed during process of production.
