Metabolomics And Statistical Analysis To Investigate The Meat Quality-related Metabolites And Their Pathways In Bama Xiang Pig And Debao Black Pig

Bama xiang pig and Debao black pig are unique pig breeds in Guangxi Zhuang Autonomous Region,and each has its own unique advantages.In order to investigate the differences between Bama xiang pig and Debao black pig in meat quality and their pathway metabolism,the dorsal longest muscle of Bama xiang p ig and Debao black big were selected for meat quality inspection.And the amino acids of both were quantified by gas chromatography-mass spectrometry(GC-MS),and the metabolites were detected by liquid chromatography-mass spectrometry(LC-MS).Then their pathway were enriched to find the differences between Bama xiang p ig and Debao black pig,and analyzed the pathway reasons for differences in meat quality.The main results were as follows:(1)The p H-1,p H-24,marbling,water content and shear force of Bama xiang pigs were significantly lower than those of Debao black pigs(P<0.01);the intramuscular fat content of Bama xiang pigs was lower than that of Debao black pigs,and the meat quality of Bama xiang pigs was better than that of Debao black p igs.(2)The amino acid content and quality of the longest dorsal muscle of Bama aromatic pigs were better than those of Debao black pigs.Most of the amino acids were significantly correlated with each other,and the overall amino acid content and quality could be predicted by the content measurement of some major amino acids such as alanine,glutamic acid and glycine.(3)A total of 1740 species of lipids,organic acids and organic oxygen compounds were detected in Bama xiang pigs and Debao black pigs in this experiment,among which lipids accounted for the highest proportion and were the main metabolite class causing meat quality differences.Theβ-alanyl-L-arginine,citric acid,creatine,D-glutamine,glutathione,isocitric acid,L-arginine,L-glutamic acid,L-glutamine,L-lysine,L-proline,L-valine,PC(16:0/0:0),PC(18:0/0:0),PC(18:1(11Z)/0:0),PC(16.0/20:3(8Z,11 Z,14Z)),PC(18:1(11Z)/16:0),PE(14:0/24:0),PE(16:1(9Z)/P-18:0),and 19 up-regulated differential metabolites and 5 down-regulated differential metabolites such as1-methylhistidine,3-methyl-L-histidine,goosefoot,glycerophosphocholine,L-histidine These differential metabolites can be used to identify the Bama and Debao black pork.(4)Pathway enrichment analysis was performed on these differential metabolites,and a total of 12 differential metabolites were enriched,including central carbon metabolism in tumors,amino acid t RNA biosynthesis,taste transduction,choline metabolism in tumors,protein digestion and absorption,β-alanine metabolism,arginine and proline metabolism,histidine metabolism,arginine biosynthesis,glycerophospholipid metabolism,D-glutamine and D-glutamate metabolism.These pathways can explain the formation of meat quality and flavor.In summary,in this study,by comparing the meat quality,amino acid and metabolite differences between the longest dorsal muscle of Bama xaing pig and Debao black p ig,24 different metabolites were screened as the difference between Bama xiang p ig and Debao black p ig,and the different metabolic pathways were screened by pathway analysis to analyze the causes of meat quality differences.
