“people regard food as their prime necessity and regard food safety as a primary concern” because feeling that food is safe is critical to people’s lives.Food of animal origin must be processed through a butchery before being edible.Strengthening the sanitary supervision of animal slaughtering is of great significance to ensuring the safety of meat and health of consumers and the prevention and control of animal diseases.Since 1997,Hunan Province has implemented a targeted slaughtering system for live pigs.After more than 20 years of endeavouer,the pig so that slaughtering industry has gradually been standardized,the quality and safety meat has been greatly improved.However,there are still some deficiencies,which need to be urgently improved.In this topic,the author inspected the conditions and slaughter operations of the slaughter production site on the spot,visited industry competent authorities and enterprises at all levels,held discussions with slaughter practitioners,consulted relevant information on the slaughter industry at home and abroad,and compared and analyzed the differences in the management of the slaughtering industry,China with developed countries,etc.,With give the author a comprehensive understanding of the status of animal health in the animal slaughtering link in our country and our province.Attle same time,the author investigete seriously in the institutional mechanisms,hardware conditions,personnel,technology,law enforcement environment and other factors that affect the efficiency of slaughter linking health supervision.The research conducted suggested that the following factors generate higher levels of influence to slaughter industry supervision in Hunan.1.Incomprehensive regulation and standard system;2.Instability of industry regulatory agencies and personnel;3.Insufficient implementing for infectious disease monitoring,toxic and hazardous substance residue testing and other plans;4.Backward slaughtering technology and basic construction conditions of slaughterhouses;5.The health supervision technology and methods unable to keep pace with developed needs;6.Fragile the industry’s law enforcement;7.Low cost of the industry’s illegal operations;8.The shortage of professional and authorised veterinarians and inspectors caused weak quality control;9.Poor management of the employees;10.Poor qualifications and a lack of sense of quality and safety of the business owners;11.Imperfecttheslaughtering enterprise’squality and safety standards and poor implementation;12.The full chain food safety traceability system from breeding to the table has not been established.Upon completing the research analysis mentioned above,the author gained knowledge from international organisations such as the World Organization for Animal Health,as well as from the practices used in developed countries such as the USA,Canada and France.Considering the factors in Hunan Province,this report gives constructive advice to help develop industry supervision,including regulation and standards;restructuring and optimising an efficient management system and associated rules;improving quarantine and testing measurements;establishing a solid management level for employees;upgrading technology;enhancing quality control standards;establishing and promoting an overall safety tracking system.The study aims to intensify the hygienic supervision level in the slaughter industry.
