Cherry tomatoes(Solanum lycopersicum.var.)are widely grown vegetable in the world.In recent years,its consumption and planting scale have increased rapidly and new varieties have emerged one after another.Therefore,it is particularly important to construct a comprehensive evaluation system for cherry tomatoes to evaluate the quality of different cherry tomatoes.In this study,sensory analysis and comprehensive evaluation of 29 cherry tomato hybrid combinations were performed.The main results are as follows:1)The set of factors and weights for sensory evaluation was established by the user survey method.The evaluation team members evaluated the appearance,texture,smell,color,and flavor of 29 cherry tomatoes in turn.The evaluation matrix of sensory analysis results was constructed using the principle of fuzzy mathematics.FN402,FN118,FN208,FN403,and FN324 with high sensory scores were selected.2)The 14 quality indexes of 29 cherry tomatoes were measured,and the cherry tomatoes were comprehensively evaluated by principal component analysis,cluster analysis and discriminant analysis.The results showed that there was a significant correlation between various indicators.The coefficient of variation of lycopene was the largest,reaching 59%,and the coefficient of variation of the transverse diameter between the combinations was only 11%.The principal component analysis reduced 14 quality indicators to 5 factor,cumulative variance contribution rate is79.05%.Combined with cluster analysis to select six indicators determining the comprehensive quality of tomato: single fruit weight,sugar-acid ratio,hardness,fruit shape index,lycopene and VC.Tomatoes with higher comprehensive scores were screened by principal component analysis:FN208,FN402,FN403,FN101,FN201;The cluster analysis divided the materials into 6 categories.A discriminant function for cherry tomato quality was established by discriminant analysis,the model self-verification accuracy was 96.6%,and the cross-validation was 79.3%.3)The dynamics of fruit quality formation at different maturity stages were studied.Fruit shape index,firmness,and soluble protein show a decreasing trend throughout the ripening stage of the fruit;soluble solids,ascorbic acid and titratable acid show a trend of increasing first and then decreasing;soluble sugar,sugar-acid ratio,and lycopene appear to gradually increase.This tomatoes are more consistent in material accumulation,and there are differences in the accumulation period and rate.The suitable harvest time for short-term storage is the pink period,and the suitable longterm storage is conversion period.
