Inflammatory bowel disease(IBD)is a chronic idiopathic intestinal disease,including Crohn's disease(CD),ulcerative colitis(UC)and a small number of indeterminate colitis(IC)different from the above two types.At the initial visit,IBD patients suffer from different degrees of malnutrition,which will lead to aggravation of the patient's condition.The progression of the disease will in turn exacerbate the nutritional deficiency,resulting in a vicious cycle.Nutrition therapy plays an important role in breaking this vicious cycle.Food for special medical purposes(FSMP)is a special food developed to provide nutritional support for special groups of people such as IBD patients,and it has good effects on the clinical treatment and postoperative rehabilitation of IBD patients.However,FSMP is in its infancy in China,with limited research and a lower industrialization level.Therefore,it is urgent to carry out research on FSMP-related raw material screening,preparation technology,and effect verification.This paper aimed at addressing the issue of the nutritional deficiency of patients with IBD,who also suffers digestive and absorption dysfunction,and selects appropriate enzymes for enzymatic hydrolysis to make them into small molecular components that are more conducive to patients' absorption.Then,this paper used Nisin-producing lactic acid Lactococcus compounded with Saccharomyces cerevisiae for fermentation optimization to produce more functional ingredients.Furthermore,it continued to explore the underlying mechanism of the formula.The results are as follows:1.Hydrolysis yields are respectively 65.3% and 62.1% under the following conditions: substrate concentration at 5%,enzymatic hydrolysis temperature of 40?,reaction time of 4 h,enzyme addition of 2800 U/g,and reaction p H of 3.0;the hydrolysis rates of soy protein isolate,soy whey protein and pea protein isolate obtained are 14.5%,13.8% and 13.3%,respectively under a substrate concentration at 5%,enzymatic hydrolysis temperature of 55?,reaction time of 4 h,enzyme addition of2100 U/g,reaction p H of 6.0,2.The animal and plant protein hydrolysates are supplemented with 1% sucrose and subjected to lactis subsp.Lactis(CICC6242)and Saccharomyces cerevisiae(EMP007).The maximum inhibition zone diameter Staphylococcus aureus Sa07 was8.9mm,48.8% higher than that of Nisin produced by lactic acid bacteria.3.Lactococcus lactis,yeast co-fermentation and other materials are mixed at an optimized ratio to produce a total nutrient formula food,and the formula food was tested for nutrition and physiology and biochemistry.The performance index system applied to total nutritional formula food for inflammatory bowel disease was explored.The effects of Lactobacillus plantarum(LP001),Lactobacillus rhamnosus(LR001),Escherichia coli(E001)and Salmonella typhimurium(ATCC14028)on the number of viable bacteria were determined by culturing LP001,LR001,E001 and ATCC14028.The experimental results showed that the viable counts of LR001 and LP001 increased by 342.4% and 300%,respectively;the viable counts of E001 and ATCC14028 decreased by 70.9% and 61.7%,respectively.In this paper,we preliminarily determined that this formula has the potential function of inhibiting some intestinal pathogens and enhancing intestinal probiotics,providing theoretical and technical support for the development of formula foods for special medical purposes of inflammatory bowel disease.
