By the end of 2017,China's walnut planting area of nearly 50 million mu,walnut annual output of about 3.65 million tons,ranking first in the world.Walnut meat contains 8 kinds of essential amino acids the human body needs,7 kinds of minerals,6 kinds of fat-soluble vitamins,but our country is far from enough for fine processing of walnut,walnut kernel except a tiny fraction of is directly used to eat most used as oil,residual oil after hydrolysis still remains the most nutrition in walnut,but most of the basic direct abandoned or used as animal feed,high quality protein resource waste and economic losses.To improve the utilization rate of deep processing of walnut,increase farmers' income,reduce waste,the hydrolysis of freshwater,this study of shaanxi green walnut varieties tested,studied the hydrolysis oil-tea and walnut pulp paste processing technology,formula and its shelf life,and the four hydrolysis products through experimental study on the nutritional value analysis,get the following results:1.The protein content,fat content,vitamin E content,Ga content,Ga content,Zn content,crude fiber content,ash content,ash content and water content are 52.7%,16.2%,0.95 mg/100g,0.33 mg/100g,0.92 mg/100g,5.6%,5.9%,6.4%,respectively.2.Bake for hydrolysis and making the basic nutrients content is less affected,but had a greater influence on the microscopic particles of color,form,comprehensive analysis,bake at 150 ? double heating 5 min best,making heat for 2 min best under the condition of 500 w.The amino acid content of walnut meal treated by roasting and roasting was higher than that of walnut meal treated by roasting.3.Among the aroma components of untreated walnut meal,30 kinds of alkanes,accounting for 18.925%,13 kinds of terpenes,accounting for 18.925%,6 kinds of benzenes,accounting for 5.251%,5 kinds of aldehydes,accounting for 20.905%,and 2 kinds of alcohols,accounting for 1.85%.Among the aroma components of roasted walnut meal,28 kinds of alkanes,accounting for 20.676%,14 kinds of terpenes,22.677,3 kinds of benzenes,3.459%,7 kinds of aldehydes,36.792%and 2 kinds of alcohols,accounting for 2.858%.Among the aroma components of walnut meal,34 kinds of alkanes,accounting for 16.36%,17 kinds of terpenes,31.623%,5 kinds of benzenes,5.800%,5 kinds of aldehydes,accounting for 26.913%,2 kinds of alcohols,accounting for 2.034%.4.After proportion conversion,the optimal formula of salted walnut meal oil tea is:walnut meal added 72.5%,wheat flour added 14.5%,peanut powder added 4.3%,five-spice powder added 2.1%,sesame powder added 1.5%,salt added 5.1%.The best formula of sweet walnut meal oil tea is:walnut meal 67.5%,wheat flour 13.5%,milk powder 4.1%,sesame powder 10.1%,sugar 5.8%.The best formula of jujube taste walnut pulp paste was:walnut pulp added 69.4%,jujube residue added 20.8%,milk powder added 6.9%,sugar added 2.9%.The best formula of sesame taste walnut meal paste was:walnut meal added 64.5%,glutinous rice flour added 19.4%,sesame powder added 12.9%,sugar added 3.2%.5.The energy,protein,fat,carbohydrate and sodium content of salted walnut meal oil tea were 1337.7 KJ/100g,42.3 g/100g,12.4 g/100g,9.4 g/100g and 176.6 mg/100g respectively.Sweet walnut meal oil tea contains 1347.7KJ/100g energy,40.9 g/100g protein,12.9 g/100g fat,10.3 g/100 g carbohydrates and 125.2 mg/100g sodium.The energy,protein,fat,carbohydrate and sodium contents of jujube taste walnut paste were 1370.0 KJ/100g,40.7 g/100g,10.7 g/100g,16.6 g/100g and 136.7 mg/100g respectively.The energy content,protein content,fat content,carbohydrate content and sodium content of sesame taste walnut paste were 1426.7 KJ/100g,42.9 g/100g,14.3 g/100g,9.9 g/100g and 140.3 mg/100 g respectively.6.The gastric digestibility,intestinal digestibility and total digestibility of salted walnut meal oil tea were 43%,56.2%and 72.3%,respectively.The digestibility of sweet walnut meal oil tea was 44.6%in stomach,57.9%in intestine and 73.1%in total.The gastric digestibility,intestinal digestibility and total digestibility were 39.8%,49.7%and 65.2%respectively.The digestibility of sesame walnut paste was 39.6%in stomach,49.3%in intestine and 65%in total.The content of essential amino acids in the four products basically met the FAO/WHO standard.
