As one of the seven major grain and four major oil-bearing crops in China,soybean is rich in protein,amino acid,oil,vitamin and other nutrients.It has many physiological functions such as anti-oxidation,cholesterol reduction,cardiovascular disease prevention and so on.It is an indispensable food in people’s daily life.The soybean industry is concentrated in the northeast region,and suitable soybean varieties are introduced in the northwest It is of great significance to increase soybean production and balance international trade.Bean sprouts are rich in vitamin C,flavonoids,polyphenols and other nutrients,which are also essential sources of vegetables in people’s daily life.It is of great significance for the development and utilization of bean sprout food and the integrated utilization of soybean resources to study the changes of various nutrients and secondary metabolism after germinationQuality and yield are two important factors to be considered in the introduction of soybeans.Two spring soybean varieties and nine summer soybean varieties were introduced into Alar.By comparing analyses of yield forming factors and nutritional quality of the experimental varieties,the high-yield and high-quality soybean varieties suitable for cultivation in Alar were selected.The results of field plot experiment showed that the yield of Jiyu 481,Jiyu 627 and Jiyu 384 was higher among 11 soybean varieties.In terms of nutritional components,the range of total isoflavones content of 11 soybean varieties was 73.72-222.58 μg/g,among which daidzein and genistein were the main isoflavones,and the varieties with higher content of isoflavones were Jiyu 481,Jiyu 627 and Jiyu 584.The total content of fatty acids in 11 tested soybean varieties ranged from 17.2%to 22.80%,of which the main fatty acids were linoleic acid and palmitic acid,respectively,The varieties with higher fatty acids were Jiyu 384,Jiyu 626 and Jiyu 202 as well as Jiyu 483 and Jiyu 584 with higher linoleic acids.The total content of 17 amino acids in 11 tested soybean varieties ranged from 11.99%to 29.70%,among which aspartic acid and glutamic acid were the main amino acids.The varieties with higher amino acid content were Jiyu 47,Jiyu 285 and Jiyu 202.The total content of crude protein ranged from 37.62%to 42.03%in 11 tested soybean varieties.The varieties with higher content of crude protein were Jiyu 635,Jiyu 384 and Jiyu 47.Taken into account of both the yield and qualitative factors,Jiyu 481 and Jiyu 627 were recommended for the suitable cultivars of soybean in Alar.The content of isoflavone,protein,polyphenol and vitamin C in two kinds of soybean before and after germination were determined by HPLC,UV and Folin ciocalteau respectively.The results showed that the content of nutrients in two soybean varieties changed in different stages of germination.With the extension of germination time,the content of vitamin C,protein and polyphenol in Jiyu 202 and Jiyu 47 increased after germination,and reached the maximum value on the 7th day of germination.The maximum value of Jiyu 202 was 9.68 mg/g,43.9%and 1.89 respectively Mg/g,the total phenols and vitamin C of Jiyu 47 were lower than those of Jiyu 202,which may be caused by different plant growth conditions.In general,the nutritional value of Soybean after germination treatment will become higher,which is more conducive to human absorption.
