With the improvement of the economic level,people’s eating habits have gradually shifted from eating to eating,no longer simply asking for the amount of food,but more focusing on the quality and nutritional quality of food.During the evolution of plants,a variety of metabolites have been produced to cope with the corresponding environmental changes or stresses.They play an important role in the adaptation of plants and the formation of nutritional quality.Vitamin C,soluble solids,flavonoids and total polyphenols are important indicators affecting the nutritional quality of vegetables.Among them,glucosinolate is called glucosinolate,which is a major class of plants containing sulfur and nitrogen.The metabolites play an extremely important role in the defense of plants,the regulation of sulfur,and the special flavor of plants and the anti-cancer effect of humans.This study identified the important nutritional quality indicators of different varieties of mustard,and explored the effects of methyl jasmonate on the biosynthesis and metabolism of glucosinolates in mustard.The glucosinolate content and composition of four cabbage varieties were analyzed.The cultivation and improvement of new varieties of cruciferous vegetables such as high-quality mustard and cabbage are of great significance.The main results of this study are as follows:(1)The contents of flavonoids,soluble solids,vitamin C and polyphenols in 31 leaf mustard varieties were determined.The results showed that the average flavonoid content of 31 mustard samples was 1.349 mg/g,and the average vitamin C content was 0.273 mg / g,the average polyphenol content was 9.565 mg / g,and the average soluble solid content was 9.910%.There were significant differences in nutritional quality indicators between different varieties of mustard.(2)Using two kinds of mustard greens,including mustard and mustard,as the experimental materials,the content of glucosinolates in leaves treated with different concentrations of methyl jasmonate was studied by high performance liquid chromatography(HPLC).analysis.The results showed that the content of total glucosinolates in leaves was significantly increased after spraying with methyl jasmonate,and reached the highest after treatment with 1mmol/L methyl jasmonate for 24h;the total aliphatic glucosinolate was sprayed in methyl jasmonate.After the increase,it reached the highest after treatment with 1mmol/L methyl jasmonate for 24h;the total glucosinolates increased significantly after spraying with methyl jasmonate,and treated with 1mmol/L methyl jasmonate for 48 h.After reaching the highest.The total glucosinolate content of root mustard increased with the increase of methyl jasmonate treatment concentration,and the glucosinolate content did not change;the total glucosinolate and total aliphatic glucosinolate content also correlated with jasmonic acid.The methyl ester treatment concentration increased,the total aliphatic glucoside and total glucosinolate were highest at 0.5mmol/L and 1.0mmol/L methyl jasmonate for 48 h,and the total glucosinolate was 1.5mmol./L methyl jasmonate reached its highest value after 24 hours of treatment.Five cabbage varieties of ’Dragon Ball’,’Sugan 25’,’Sugan 27’,’Beta’ and ’Sweet 55’ were detected by HPLC,in cotyledon stage,rosette stage and ball stage The difference in glucosinolate content and content during the three periods.The results showed that 10 glucosinolates were detected in five varieties,and there were significant differences in the components and contents of glucosinolates among different varieties.The content of total glucosinolates in the shoots of ’Beta’ in the cotyledon stage was the highest,and the content of total glucosinolates in the shoots of the ’sweet 55’ varieties in the rosette stage was the highest;the total amount of sucrose in the shoots of ’Dragon’ The highest content of glucosinolates.Among the five cabbage varieties,4-methylthiooxetane was detected only in ’beta’.
