| Common wheat(Triticum aestivum)is one of three major grain crops worldwide and the main raw material of starch production.Starch plays irreplaceable roles in food industry,pharmaceutical industry and paper-making industry.Starch from different wheat varieties has various usages due to their different composition and physicochemical properties.The environment has important influence on the quality of wheat,so the ecological region classification of wheat was an important way for quality improvement of wheat.The research on effects of different ecoregion on composition and physicochemical properties of starch has important values.In this study,27 wheat varieties(lines)in sichuan province were grown in four ecoregions(Wenjiang,Xichang,chongzhou,Renshou)during the year of 2012-2014.The total conten,ratio of amylose and amylopectin,content of amylose,properties of pasting and retrogradation were deteminated;the meteorological data of different ecoregions during 2013-2015 were collected;the correlations between different properties of starch quality and environmental factors were analyzed;some varieties(lines)with extreme starch quality were found.The main results were as follows:1.Different properties of starch quality(total conten,ratio of amylose and amylopectin,content of amylose,properties of pasting)in one ecoregion during 3 years did not have significant differences.Based on the average values,the total starch content,amylose content and amylase/amylopectin showed a trend as Renshou>Wenjiang>Xi chang>Chongzhou.2.The initial pasting temperatures of wheat starch from Renshou and Chongzhou were significantly higher than those from other two ecoregions.On the average levels,the initial pasting temperatures showed a trend as Renshou>Chongzhou>Xichang>Wejiang.3.The correlation analyses between starch composition and pasting properties indicated that the correlations among total conten,ratio of amylose and amylopectin,content of amylose and properties of pasting contained great variation and all the obvious correlations were positive.4.The correlation analyses between properties of starch quality and meteorological factors showed that different meteorological factors influenced the composition and pasting of starch,to varying degree.The rainfall,temperature and sunshine duration could significantly influence most of the properties of starch quality.5.A number of varieties(lines)with specific starch quality were found via further analyses and comparison of starch properties.Some varieties showed stable quality among different ecoregions,and some varieties showed huge differences among different ecoregions. |
