Dateplum persimmon,which is one of the homology of medicine and food,It is rich of nutrient things and can be care of healthy.However,fresh Dateplum persimmon has many characteristics,such as seasonal,regional,being short of collection period,being short of sale period.In the sale period,If can't sale out,It was easy to spoilage during storage and transportation.Development of Dateplum persimmon products have the advantages of small investment,high yield,economic efficiency high.The black soybean's coat is the black soybean hull,which is the byproducts of making black soybean oil.It was discarded in the process,causing the raw material waste.It is nutrient-rich,containing dietary fiber,anthocyanins,and other active ingredients.Therefor,in order to extend Dateplum persimmon's storage,promoting the Dateplum persimmon's using value and black soybean hull's comprehensive utilization value.In this paper,It makes black composite solid beverage based on Dateplum persimmon and black soybean hull by spray drying,evaluating quality index and nutritional components.On the one hand,It contributes to solve the storage problem,on the other hand,explores the processing technology and optimization of process parameters.And also,It provides reference for Dateplum persimmon and black soybean hull's the deep processing and new product development.Major results showed that:1.The process of superfine grinding-assisted enzymatic hydrolysis to extract the soluble dietary fiber from black soybean hull,and the extraction conditions were optimized by two general rotary combination design.The influence of various factors on the yield is that the ratio of enzyme to substrate > the liquid-to-solid ratio >the enzymolysis temperature.The results showed that optimum conditions: when the particle size was 25~38 ?m,liquid-to-solid ratio as 30:1 mL/g,ratio of enzyme to substrate 188 U/mg,the enzymolysis temperature 60?,under which the extraction average product rate of SDF is up to 12.01%,the expansibility was 2.56 mL/g,the water-holding power was 377%,the oil holding capacity was 138%,and the adsorption rate of sodium cholate reached 29.89%.2.The Dateplum persimmon contains much pectin and cellulose,It has negative effect on juice yield and viscosity.If not using enzyme technology,there will be a lot of stick wall,increasing the difficulty of spray drying,causing the raw material waste.When the hydrolysis was performed using 0.2% multi-enzyme(pectinase and cellulase)for 90 min at 45? and initial pH 4.5,increasing the juice yield and reducing the viscosity,the total soluble solids contents of the composite slurry was 65.89%,improving the effect.Comprehensive consideration,through enzymatic hydrolysis followed by spray drying,The composite solid drink based on Dateplum persimmon and black soybean hull powder's quality was better.3.Spray drying process of Dateplum persimmon enzymolysis liquid was optimizated by response surface method.The influence of various factors on the yield is that adding the amount of gum Arabic >the air-inlet temperature >the feed rate.The results showed that under adding the amount of black soybean hull's soluble dietary fiber of 1.5%,an air-inlet temperature of 176?,adding the amount of gum Arabic of 53% and the feed rate of 818 mL/h,resulting in an average powder yield of 26.89% with water content smaller than 5%,bulk density was 0.538 g/mL,and high suitability for long-term storage.4.The composite solid drink based on Dateplum persimmon and black soybean hull whose comprehensive nutritional value is higher,and is rich of soluble dietary fiber,vitamin C.The content of Soluble dietary fiber and vitamin C is 4.29 g,18.94 mg,The content of trace elements(K,Ca,Na,Mg,P)is 265.17 mg,22.01 mg,0.33 mg,24.25 mg,38.02 mg.From the analysis of its amino acid composition,it is found that the sulfur-containing amino acids are relatively low and the protein is rich in nutritional value.The average nutritional value is higher than commercial Dateplum persimmon powder.Therefore,it is a kind of new food resource with high nutritional value.
