This paper discusses the development of pueraria noodle,the detection of puerarin in the noodle and the application of HACCP in the production ofpueraria noodle.1?A rapid and effective method was established for the determination of puerarin in pueraria noodle by HPLC.After the sample was extracted by 70%methanol,it concentrated and purified by HLB solid phase extraction column.The separation of targeted compound use methanol:20mmol ammonium acetate solution(85:15)as mobile phase,with PDA detector and external standard method peak area quantification.The linear range of puerarin was in the range of 10.0 ?g/mL-120.0?g/mL with a correlation coefficient of 0.999.The detection limit was 1.0?g/mL and the quantitative limit was 3.0 pg/mL.The recovery rate was 93.5%-95.8%.2?With flour and pueraria as raw material,food additive and the proportion of salt were studied in order to improve the quality of the noodle.The test results show that determination of main raw material ratio of pueraria noodles(pueraria:flour)3:7,adding 33%of solution of 0.4%(NaPO3)6 with 5%NaCl,20min curing can produce good texture of pueraria noodles.3?The research and application of HACCP in the pueraria noodles production,describes the process of pueraria noodle,and hazard analysis,determine the critical control points of pueraria noodle production,formulate the corresponding preventive measures,control methods and corrective measures,formulate the HACCP file system.The pueraria was used as pueraria noodle that can be used as the pueraria of the deep processing of products,and it has a broad market value.The determination of puerarin in pueraria noodle has the advantages of simple pretreatment,good purifying effect,high sensitivity and fast detection rate,and is suitable for the separation and quantitative detection of puerarin in'pueraria noodle.The production of HACCP system can be used to improve the overall management level of the enterprise,to ensure food safety and health,and to accelerate the pace of international integration.
