Gelatin is the main material for edible and degradable packaging.Due to food safety issues and personal religious beliefs in recent years,traditional gelatin cannot be used in large quantities,and there is an urgent need for research and development of new gelatin materials.In order to find the most suitable gelatin film-forming material,the film-forming properties of chicken skin,rabbit skin and salmon skin gelatin were determined,the best film-forming substrate was selected,and antibacterial agents,antioxidants and cross-linking agents were applied to the chicken skin gelatine.The effect of the film is to match the composite film with better performance indicators.Finally,the composite film is applied to the matsutake packaging to further illustrate the antibacterial and antioxidant effects of the composite film.The results show that:The water vapor permeability,water solubility and oxygen transmission rate of the rabbit skin gelatin membrane are the lowest among the three,and can also show good mechanical properties.The thermal stability of the chicken skin gelatin membrane is better,and the rabbit skin gelatin is found through the infrared spectrum.The internal structure of the film is more stable.Therefore,the performance of rabbit skin gelatin film is better than that of fish skin and chicken skin gelatin film,and it can be used as a new type of gelatin film material.There is an interaction between the components of curcumin and the gelatin molecules of chicken skin.With the increase of the concentration of curcumin,the appearance color of chicken skin gelatin film gradually turns yellow,and the barrier performance first decreases and then rises.The tensile strength is opposite to that of fracture.Elongation and water-solubility are gradually reduced,and the antioxidation and antibacterial properties are significantly enhanced.In the infrared spectrum,there is a hydrogen bond between curcumin and chicken skin gelatin,so that the chicken skin gelatin film is transformed from an a-helical structure into a stable triple helix.Structure;Thermogravimetric analysis showed that the addition of curcumin increased the thermal stability of the chicken skin gelatin film;when the curcumin concentration was 2%,the composite film had the best overall performance.Based on the analysis software Design-Expert 8.5 design experiment program,through the determination of the tensile strength and water vapor transmission rate of the composite membrane,the regression model was obtained by using quadratic regression.Using the response surface of the model,the key factors affecting the composite membrane's tensile strength and water vapor transmission rate and their interactions are discussed to obtain the best matching scheme for the additives.The composite film made according to this scheme was used for fresh preservation of Tricholoma matsutake,and it was superior to curcumin-chicken skin gelatin film and common polyethylene cling film in sensory evaluation of tricholoma matsutake,polyphenol oxidase activity,lower respiratory intensity,and weight loss rate.The results of this study provide a theoretical basis for the application of compound chicken skin gelatin film in actual production.
