Objective: Through the investigation of the pickled cabbage intake levels and contents of nitrite in pickled cabbage,pickles among the Heilongjiang area,To learn about the situation of the nitrite intake of the people with the pickled cabbage diet and further explore the relationship between the nitrite intake and the oxidative stress.Dietary pickled cabbage and pickles was detected by flow cytometry in plasma nitrite intake IL-17A、IFN-γ、TNF、IL-10、IL-6、IL-4、IL-2 Cytokines and Chemokine CXCL10 levels to explore dietary pickled cabbage and pickles and nitrite intake level the effects of inflammatory factors on the human body.Methods: 80 people were selected from the investigation of the typical population of two villages in Hainan Township,Xi’an District,Mudanjiang City,Heilongjiang Province.We collect the object of the day’s dietary pickled cabbage,pickles intake samples,respectively in early December and the end of February,conduct a general demographic survey,and collect blood samples twice.Determining the nitrite content of dietary pickled cabbage,pickles by GB 5009.33-2010,and combine with dietary pickled cabbage and pickles intakes,to calculate the dietary intakes of nitrite;The content of CAT and SOD in plasma was determined by colorimetric method,The levels of IL-17 A,IFN-γ,TNF,IL-10,IL-4 and IL-2 in plasma were detected by flow cytometry(CBA),and ELISA double antibody sandwich Elisa assay for plasma CXCL10 Level.According to the distance between the intake quartile group following quartile distance reference group and 1-4 Group are each 20。Test and compare the high-intake group and control groups in human plasma by CAT and SOD activity.Higher intake in human plasma with a control group IL-17A、IFN-γ、TNF、IL-10、IL-4、 IL-2 Cytokines and Chemokine CXCL10 Level.Results: Describe the investigations of general demographic characteristics of typical,first survey of dietary intake of pickled cabbage 195.98 ± 79.32 g,second survey of dietary intake of pickled cabbage 178.89 ± 49.55 g.First collected 70 pickled vegetable samples,the second collected 66 samples of pickled cabbage.A total of 136 samples of nitrite detection rate of 70.6%,excessive rates for 0.7%.First survey the average concentration of nitrite in plasma samples for 13.79±11.27 uM,second survey collected 80 average concentration of nitrite in plasma samples for the 11.67±6.31uM。To investigate the object distance between nitrite intake quartile group1-4 Group nitrite intake are as follows:82.98±75.86ug、273.77±33.81ug、405.27±39.63ug、723.33±147.95 ug.After meal pickled cabbage and pickles,and nitrite content in human blood plasma is stable.After meal pickled cabbage and pickles,in human plasma in the CAT dynamic,CXCL10 levels stabilized,SOD activity inhibited.Dietary pickled cabbage and pickles in human plasma after IL-17A、IFN-γ、TNF、IL-10、IL-6、IL-4 Cytokine levels declined.Conclusion: Intake survey surveyed areas pickled cabbage,pickles typical dietary nitrite in pickled cabbage and pickles in standards within a limited range;the content in blood of different pickled cabbage consumers is undifferentiated,dietary pickled cabbage and pickles intake of nitrite,the SOD activity has a certain inhibitory effect.In this study,there were some correlations between the changes of inflammatory factors and the intake of nitrite in different pickled cabbage consumers.With the increase of total nitrite intake in meals,pickled cabbage and pickles,The levels of IL-17 A,TNF,IL-10,IL-6 and IL-4 in human plasma were decreased. |
