In this thesis,the extraction,separation,composition and antioxidant activity analysis were studied on the red Camellia oleifera(C.oleifera)fruits,which were obtained from Macheng Hubei.Firstly,the best conditions of total sugar,total flavonoids and total phenolics extraction of C.oleifera fruit were obtained through experiments,and the content of the three compounds were determined.(1)Under the condition of 80%(w/v)ethanol solution as the extraction solvent,0.8%(w/w)cellulase,liquid to solid 25(v/w),ultrasound extraction 1 h,the total sugar extraction yield of C.oleifera shell reaches 12.53%.(2)Under the condition of 60% methanol solution as the extraction solvent,0.6% cellulase,liquid to solid 15,ultrasound extraction time 80 min,the extraction yield of total phenols of C.oleifera shell reaches51.6%.(3)Under the condition of 60% methanol solution as the extraction solvent,0.2% cellulase,liquid to solid 20,ultrasound extraction time 80 min,the extraction yield of total sugar from C.oleifera seed reaches7.01%.(4)Under the condition of 35% ethanol solvent,0.4% cellulase,liquid to solid 25,ultrasound extraction time 80 min,the total flavonoids extraction yield from C.oleifera seed reaches 1.37%.(5)When 35% methanol solution as the extraction solvent,1.0%cellulase,liquid to solid 20,ultrasound extraction time 60 min,the total phenols extraction yield from C.oleifera seed reaches 9.7%.Secondly,chemical constituents of the petroleum ether extract ofCamellia fruit shell and seed were comparatly analysised by GC-MS.39 kinds of seed and 42 kinds of compounds in shell are obtained.Those consist of heterocyclic,alkenes,fatty acids,alcohols,ketones,phenols,alkanes,fatty acid esters and aldehydes.And the two parts have 6 kinds of same components,which include nonanal,geraniol,methyl linoleate,methyl oleate,oleic acid and tocopherol.In the shell,the content of fatty acids,phenols and fatty acid esters are higher than other components,which are 29.3%,18.91% and 33.43%.The content of oleic acid in shell and seed both were the highest.Thirdly,sephadex column,silica column,C18 column and TLC analysis were used to isolate and purify the dichloromethane and ethyl acetate extracts of Camellia fruit.5 substances were obtained at last.Those structures were identified by the four wave spectra,and the 5substances were confirmed as n-octane,isopropyl cyclohexane,amyl gallate,sesame phenol and catechin.Forthly,amyl gallate(III),sesame phenol(IV)and catechin(V)antioxidant capacity were studied.The results as follows.The total antioxidant result of the three is IV > VC > V > III.The hydroxyl radical scavenging capacity result of the three is VC > IV ?V > III.The superoxide anion scavenging capacity result of the three is V >VC > III > IV.As studyed the all of the above,the C.oleifera Abel fruits are rich in antioxidants,and its medicinal and edible value are worth of better development and utilization.
