The microbial diversity and fungal microbial diversity of four kinds of rice wine were studied by PCR-DGGE combined with one generation sequencing method and high-throughput sequencing. On the level of genus, the difference between wheat Qu L and Xiao Qu Q was the highest in the analysis of bacterial flora, and the difference between Hong Qu H and wheat Qu L was least. In the analysis of fungal flora, the difference between Hong Qu H and wheat Qu M was the biggest, and the difference between Hong Qu H and Xiao Qu Q was the smallest. The comparison of the two methods shows that the high-throughput sequencing method is much more sensitive than the first method in the study of microbial diversity, but there are some bacteria that can be analyzed by the first method, they did not show the dominant genus when analyzed with high throughput sequencing.In order to study the bacterial phase of bacteria producing amines in the rice wine Qu,four kinds of rice wine Qu (wheat Qu M, wheat Qu L, Xiao Qu Q and Hong Qu H) were used as the research objects, through the primary screening by the decarboxylase culture medium, high performance liquid chromatography re-screening, and by 16S rDNA gene sequence analysis, The bacterial of biogenic amines produced in the samples were separated and identified. The results showed that 90 strains of producing amines were screened, Including 44 strains of Enterobacter, 13 strains of Bacillus , 7 strains of Klebsiella , 6 strains of Lactobacillus, 4 strains of Salmonella, 4 strains of Cronobacterium,3 strains of Enterococcus, 2 strains of Acinetobacter , 2 strains of Escherichia coli, a strain of Pediococcus, a strain of Pantoea , a strain of Leuconostoc , a strain of Citrobacter and a strain of Staphylococcus. Many of them producing a variety of biogenic amines, but do not isolate tryptamine -producing bacteria. In this study, a series of bacterias with producing biogenic amines were isolated and identified from a variety of rice wine Qu, which provided the theoretical reference for exploring the types and contents of biogenic amines in different Chinese rice wine.
