In this paper, in order to identify organic Lapsang Souchong black tea, provide certain reference for certification of organic tea and provide a new perspective for the study of the pattern recognition algorithm of the electronic nose and the electronic tongue system,the gas chromatography-mass spectrometer (GC-MS), electronic nose and electronic tongue were used to determine the chemical composition, aroma and relish information.Then, respectively combined with appropriate pattern recognition algorithm and simulation using matlab software for pattern recognition algorithm to evaluate it.CG-MS were respectively used to detect organic Lapsang Souchong tea, ordinary primary Lapsang Souchong tea and ordinary secondary Lapsang Souchong tea of 46 kinds,48 kinds and 55 kinds of aroma substances, the most abundant aroma substances were geraniol, linalool and linalool oxide.Three kinds of Lapsang Souchong tea has 35 kinds of common aroma substances, geraniol, linalool oxide and linalool is the most important aroma substances, the content of the sum of the three aroma substances are respectively 46.26,50.35 and 31.09. It can be seen aroma of organic Lapsang Souchong tea and the ordinary primary Lapsang Souchong tea is almost the same, than the aroma of ordinary secondary Lapsang Souchong tea better. The overall flavor of ordinary primary Lapsang Souchong tea is best in the sensory evaluation's results, organic Lapsang Souchong tea followed by a little. Finally, the outcome of the sensory evaluation are consistent with the test results of GC-MS.The electronic nose were used to determine the aroma of three kinds of Lapsang Souchong tea. The discriminant results showed that principal component analysis, discriminant factor analysis, soft independent modeling of class analogy, cluster analysis, K-Nearest Neighbor and decision tree Classification algorithm can be 100%to distinguish three kinds of Lapsang Souchong tea.The electronic tongue were used to determine the relish of three kinds of Lapsang Souchong tea. The discriminating results showed that principal component analysis, discriminant factor analysis,cluster analysis, radial basis function network and probabilistic neural network can be 100%to distinguish three kinds of Lapsang Souchong tea.To sum up, the gas chromatography-mass spectrometer,the electronic nose and electronic tongue in combination with the appropriate pattern recognition algorithm can be used to identify organic Lapsang Souchong tea. And combining these three kinds of recognition method can greatly improve the recognition accuracy rate of organic Lapsang Souchong tea.
