| With the progress of society,people are increasingly concerned about the health ofdiet.Teenagers as the future of the motherland and the hope of the nation are received moreattention. Primary and middle school canteens are very important eating sport for teenagers.Food safety of school canteens are import for teenagers’ health growth. Therefore, this articletry to find the problem of management and supervision about primary and middle schoolcanteens food safety, and explore the effective suggestions to improve primary and middleschools canteen food safety level.This article has studied the literature on school canteen food safety over the past. Thenthis article had done a survey about primary and middle schools canteen food safety situation,a case of Wei fang. The survey includes eight major items and thirty seven small items aboutschools canteen food safety. The result showed that the average passing rate is71.02%in allinvestigated primary and middle schools of Wei fang. In the vertical perspective, the passingrate of primary school, junior high school and high school is71.66%,69.62and71.78%.In theeight surveyed major items, the highest passing rate items are permission and food additives,the lowest passing rate items are food safety management and cleaning disinfection.According to the results of the analysis, we summarized the problem of the primary andmiddle schools canteen management and supervision and the education of food safety forteenagers. For school, the main problem of canteen management is the lack of food safetyregulatory organization and the unclear responsibilities. For school canteens, the mainproblem of canteen management is that operational processes are not standardized. Forgovernment, the major problem of school supervision is that the check is lack of quantitativeindicators and the inspection resources used unevenly. For the students’ education aspect, themain problem is the lack of formal food safety education.According to the front analysis, this article put forward the suggestions from several aspects. Primaryand middle school should established sound organization about food safety management and supervisionand personal lined responsibilities. School canteen use HACCP system management to standardizeoperating procedures and control the key process. For government, this paper proposed use quantitativeclassification management system in school cafeteria supervision. For school education, this paperproposed put food safety education into formal education. |
