With the improvement of living standard, people pay more and more attention to food safety issues. Pigment is divided into synthetic pigment and natural pigment. Because of its detriment, Synthetic pigment is rejected day by day, On the contrary, the nature pigment becomes more and more popular. Fungi pigment gradually becomes an important way for natural pigment by the advantages of fast growth, easy to cultivate, mass production easily. A fungus named Geomyces sp. WNF-15A which secreted a special amaranthine pigment was isolated from soil collected from Antarctic.1.71g red powder could be collected from1L fermentation broth.In order to explore the composition of Antarctic red pigment, we use a variety of technologies, such as, column chromatography, HPLC, IR, MS,1H-NMR,13C-NMR For the purpose of investigating the stability of Antarctic red pigment, we contrast its stability under different conditions such as UV, Oxidizing and Reducing Agents, food additives, metal ions, acid and alkaline condition. We also study the reducing power and antioxidant activity and antibacterial property of Antarctic red pigmentThrough the separation and identify,7kinds of chemicals have been discovered. And4of them have been differentiated. They are2,3-butanediol, p-hydroxyl benzoic acid, oleic acid and phthalic acid esters. We also get a red mixture, and determine that its molecular weight is338through structure analysis. It’s chemical structure is similar to monascus red pigment.The study show that the Antarctic red pigment has a high resistance to UV, and it’s very stable in pH from6to10. It also has well stability to the great majority metal ions.The results show that they have reducing capacity and antioxidant activity. When the content is1mg/mL, the maximum scavenging rate on superoxide anion radicals is26.52%, the maximum scavenging rate on DPPH is73.11%, the maximum scavenging rate on hydroxyl radicals is67.31%. From the study we find that the Antarctic red pigment do not has antibacterial effect. We also know that Geomycessp. WNF-15Acontain30.67%sugar,22.27%lipds and25.4%protein.Systematic pre-experiment show that the fermentation solution of Geomyces sp. WNF-15A contained amino acid, protein, polypeptide, organic acid, spooning, falconoid, anthraquinone, cardiac glycosides, lactones, coumarone, pHytosterol, triterpenoid constituents.The stability of Antarctic red pigment is better than cochineal red pigment, and the biological activity is superior to other natural pigment. Therefore, the nature pigments with antioxidant activity and reducing capacity, especially the fungi pigments Antarctic red pigment, will have broad prospects in application...
