Pleurotus ostreatus, a kind of white rot fungies, hydrolyzes substance with large molecule such as cellulose, hemicellulous, xylogen and amylum, and so on, into materials with smaller molecules by extracellular enzymes secreted itself, and grows by absorbing them. There are direct correlations between the activity of extracellular enzymes and the mycelia growing, and the fruting-body emerging. In this dissertation, the activities change and the breathe intensity of several kind of the extracellular enzymes during different period were studied using Pleurotus ostreatus xin-831, heipingwang and heiping-5 as experimental materials. The correlation were determined using SPSS 13.0 software combined with the first crop and total yield. The results are as followings:1. Culture period of plate mycelia: There is a significant negative correlation between the activity of laccase and total yield, yet a negative correlation between respiration intensity and yield of the Pleurotus ostreatus strain, which indicate that the total yield can be predicted by the activity of laccase and respiration intensity during the period of plate mycelia in culture.2. Culture period in liquid: There is a significant positive correlation between the activity of laccase and yield, yet a significant negative correlation between the biomass production and yield of the Pleurotus ostreatus strain, which indicate that the total yield can be predicted by the activity of laccase and biomass production during the period of submerged culture.3. Culture period of cultispecies: There is a significant negative correlation between the time of mycelia grown full of the bag and yield during the period of cultispecies, which indicate that the yield can be predicted by the time of mycelia grown full of the bag during the period of cultispecies. There is a positive correlation between the activity of peroxidase in 6th day and the activity of amylase in 12th and 24th day and yield, a significant positive one between the activity of peroxidase in 18th day and yield, a negative correlation between the activity of filter paper (FPase) in 24th day and yield, this indicate that the yield can be predicted by the activity of peroxidase, amylase and filter paper (FPase) in the different period of cultispecies. 4. Fruiting cultivation period: There is a positive correlation between the activity of peroxidase and yield when the mycelia of Pleurotus ostreatus strain grown half of the bottle, the fruit-body maturing period, the second fruit-body maturing period and the second fruiting; a significant positive correlation between the activity of amylase and the yields when the mycelia grown full of the bottle, the second formation of primordium and the second button period, while a positive correlation between the activity of amylase and the yields during the first two generations of fruit-body and the second fruit-body maturing period; a positive correlation between the activity of protease and yield during the second formation of primordium; a positive correlation between the activity of carboxymethyl cellulose(CMCase) and yield, while a significant positive correlation between the activity of protease and yield during the second button period and the second fruit-body maturing period; this indicate that the yield can be predicted by the activity of peroxidase, amylase, protease and carboxymethyl cellulose(CMCase) in the different period of fruiting cultivation.There is a significant positive correlation between the first crop and total yield during the whole period of Pleurotus ostreatus, which indicate that the yield can be predicted by the first crop.In conclusion, among the three strains, the change tendency of extracellular enzymes activity and respiration were different, the correlation between the physiological indexes and yields were different during different cultivation period. The dissertation supplies an academic foundation to shorten the period for Pleurotus ostreatus breeding.
