Guanzhong black pig has trained for many years, its pork quality are marbled, delicious,and its taste feeling are higher than ordinary pig. But breeding for three decades, to obtain a high lean percent and low backfat thickness by fostering improvement, growth-promoting nutrition and other measures at the same time, the meat of guanzhong black pig quality has been declining. And how to enhance meat quality without compromising quality at growth performance and carcass performance of the premise, has become a major scientific issue of animal science researchers that solved urgently. The micro RNA plays an important role in fat deposition and muscle development. Therefore, this study use guanzhong Black Pig of 3d,30 d, 90 d, 180 d as research subjects,which measured their body weight, body length, body height, leg-hip circumference and other growth performance, it was measured 180 d in guanzhong black conventional meat quality indicators, amino acid content, intramuscular fat content and fatty acid composition. Finally, we analyzed the correlation of mi R-423-5p and meat quality, to obtain the following main results:1. The GZP slaughter rate is 63.37 ± 3.75%, lean meat rate is 60.00 ± 3.29%, loin eye muscle area is 21.76 ± 2.49%, backfat thickness is 16.13 ± 1.19mm;2. The p H45 is 6.18 ± 0.06, points flesh is 3.68 ± 0.11, marbling is 2.83 ± 0.21, shear force is37.76 ± 2.89 N.3. Guanzhong black pig longissimus total amino acid content is 20.93 ± 1.10%, of which the essential amino acid content is 8.13 ± 0.48%, flavor amino acid content is 7.9 ± 0.4%;unsaturated fatty acid content is 58.48 ± 1.00%. amount of water loss rate4. The expression of mi R-423-5p showed a significant negative correlation with water loss rate, was highly correlated with lean percentage; and the delicious amino acids, essential amino acids showed high negative correlation, unsaturated fatty acids was significant positive correlation, intramuscular showed significant negative correlation with the expression of mi R-423-5p.In short, the GZP grows slowly, but its meat quality is excellent; the expression of mi R-423-5p showed highly positively correlated with delicious amino acids, essential amino acids, high negative correlation with lean percentage. The results is in order to the guanzhong black pig purification and rejuvenation that provides basic data.
