Comparisions Of Carcass Traits And Meat Quality Between Taijue Pig And Largejue Pig

Juema pigs as a short size, plateau swine breeds, located in pasture of southern Gansu.As early as 2006, Juema pigs were listed as "National Animal Genetic protection of species",which are famous for their pure, thin, fresh meat, and good taste. Along with the introduction and hybridization of alien species, genes and genotypes of Juema pigs are gradually complicated. According to the statistics, there are only 60,000 Juema pigs within the scope of our country. Due to the excellent features of large population and germplasm characteristics of Juema pigs, it has been favored by breeding workers for a long time comparing to the Taihu and Large White pigs. In order to protect and exploit Juema pigs better, we have studied crossbred pigs( Juema pig(as maternal line)×taihu, Large White pig(as paternal line)) to determine and compare the carcass performance and meat quality traits of Largejue and Taijue crossbred pigs.Our data suggested that:1. Dressing percentage is 74.43±1.13%, carcass lean meat is 52.88±3.39%, carcass length of Largejue pigs is 75.66±1.52 cm,are significantly higher than Taijue pigs, suggesting that the carcass performance of Largejue is better than Taijue pigs.2. Marbling is 3.10±0.65 points, intramuscular fat content is 3.51±0.01%, total amino acids is, and total amino acid content of Largejue pigs is 21.88±0.61%, essential amino acid content is 8.73 ± 0.26%, umami taste amino acid content is 7.38 ± 0.17%,those are higher than Taijue pigs, suggesting that the tenderness, flavor and nutritional value of Largejue pork are better than Taijue pork.3.The expressions of Taijue pigs intramuscular fat content-related genes MC4R、ADPLA and SCD are strikingly increased compared to Largejue pigs, and the expressions of fatty acid content-related genes ADRB3、PPARα are not significantly different. The intramuscular fat and essential flavor amino acid content of Taijue pork are higher than the Largejue pork,which are consistent with meat quality traits. These data indicate that Taijue pigs have the advantages of good succulence.Taken together, the carcass performance of Largejue pigs is much better than Taijue pigs,however meat quality is lower than Taijue pigs.
