The fish offcut is the off-fall of processing of fishery product,and its traditional utilization value is low.In this study, we used the fish offcut as raw material, determine the best craft enzyme,and established reciprocal craft regulation mathematic model.We also checked enzymolysis level under the best craft condition, made amino acids analysis、physics and chemistry analysis、and digestion experiment analysis on the enzymolysis liquid.The study shows enzymolysis product is more benifcial to the digestion、absorbtion and utilization of piglets,providing a new method for exploitation and utilization of fish offcut.1、In this paper, we used the enzymatic hydrolysis to prepare the hydrolyzate, compared the hydrolization result of the Flavourzyme、Alcalase and 1398 dispase according to the concentration variation of the free amino nitrogen and determined Flavourzyme as the craft of fish offcut enzymolysis.2、On the basis of the determination of the enzyme used in the craft of fish offcut, we used four factor quadratic regression orthogonal rotation design of experiment、made the degree of hydrolysis as an index、investigated the contribution of enzyme dosage、 PH、temperature and time to the hydrolysis craft and established corresponding craft regulation mathematic model.We determined the contribution degree of four factors to the degree of hydrolysis.3、We made a mountain-lophos analysis of the model and got the best enzymic hydrolysis craft condition.4、Authenticated the enzymolysis degree under the best craft condition by the crosscut experimentation、investigated the contribution of enzyme dosage、PH、 temperature and time to the hydrolysis craft, and made a conclusion below:the optimal PH of the hydrolysis craft, preferential temperature is 54℃,the enzyme dosage and time have a direct correlation with the degree of hydrolysis.5、Through the analysis of amino acid, physico-chemical analysis, antioxidant determination and digestion test in pig vivo, the results show that enzymatic hydrolysates of fish offcuts is rich in amino acids, and has good antioxidant activity, appearing as the strong antioxidant activity in the linoleic acid system, DPPH radical scavenging capacity (when concentration of enzymatic hydrolysates is 1mg/ml, the scavenging rate is up to 23%), hydroxyl radical (·OH) scavenging capacity (when concentration of enzymatic hydrolysates is 10mg/ml, the scavenging rate is up to 83%)and so on. Enzymolytic protein is a kind of oligopeptides which can be easily digested and utilized by animals,the digestive data of crude protein, fat, crude fiber and nitrogen free extracwas was up to 80.8%,71.5%,23.7%,85.2%。Compared to the condition of unhydrolysis, these data has got greatly improved. In particular, the digestive data of crude protein increased nearly 20.5%。These findings fully demonstrate the feasibility and practicality of production of animal feed by enzymic hydrolysis of fish offcuts. The situation of fish offcuts in animal vivo digestion, absorption and utilization has changed greatly, and the quality gets great improved before and after enzymatic hydrolysis of fish offcuts of,. Through enzymatic hydrolysis of fish offcuts, the resources can be utilized effectively, and achieve the goal of reducing pollution and protecting the environment.
