Jujube fruit cracking has become a major issue in Shanxi province’jujube industry development. It has important significance to solve rural issues to explore jujube fruit cracking mechanism. In this study, four common jujube varieties of Shanxi Province was selected as the experimental material to reveal cracking mechanism by observing cracking conditions and organizational structure of jujube fruit cracking. The influence of different concentrations plant growth regulator on fruit cracking jujube was explored. The results showed that:l.The organization structure of jujube fruit is being change obviously from young fruit period to ripe stage, jujube fruit cracking rate can be as rising with the increase of maturity, at the same time jujube fruit cracking is also related to the mature period weather conditions.2.There was a significant negative correlation between thickness of horny layer, and fruit splitting rate. There are three types include approximate round, oval and irregular contour of cell shape when jujube epidermis stomata distorted, jujube epidermis stomata distortion could affect respiration which would lead to flesh metamorphism.3.Different concentrations of plant growth regulators could affect jujube cell formation and distortion, and then destroy the jujube fruit cell opening of stomata. The plant growth regulator at low concentration could promote the increase of the stomatal aperture, while high concentrations of plant growth regulator suppressing an increase of stomatal aperture. The result showed the rate of cracking of jujube with KT and SA were significantly higher than CK.
