Figs can be used for both food and medicine, as a traditional Chinese herbal medicine, it’s mild-natured,sweet in taste,meantime, it contains fructose, glucose, amino acids, protein, vitamin A and other ingredients.Fig plant has less diseases and insect pests, so we called it the “Green fruit”, which is coincidence with the standards of modern people’s demand for healthy food, figs must have a broad prospects in the future. Figs have thin peel and juicy, in fact, at room temperature,it only can be stored 3~5 days,which restricted the fig’s sale market greatly.The topic of this experiment is to use the controlled atmosphere methods extending the storage period of fig, reducing the loss, promoting the development of fig industry. This laboratory had studied a series of preservation methods and the fig’s mechanism of aging, such as Effect of different temperature and ozone ice coating film treatment on physiology and quality of fig fruits during the storage,Effects of 1-MCP Treatment on Ethylene Biosynthesis Metabolism of Fig Fruits during Storage,Effects of Ozone Ice Coating Film on Active Oxygen Metabolism of Ficus carica L. during Storage, these researches provides theoretical basis and practical experience for controlled atmosphere storage. This main experimental conclusion as the following:The main research results were as follows:(1)The influence of temperature on the storage quality. Selected-2℃,-1℃, 0 ℃,and 1 ℃four temperature for test, then chose the best temperature through testing the physiological and the quality indicators of figs during the storage.On the 25 th day of storage,the reducing sugar content was 13.47% under 0 ℃,which was significant difference with the other 3 groups(P<0.05), titratable acid content was 0.126% and the content of VC was 11.57 mg/100 g, which were significant difference with-2℃、1℃(P<0.05),while there was no significant difference with 1℃;at the same time,the respiratory peak was 51.65 mg/kg · h- 1, significantly lower than other 3 treatments(P<0.05), POD activity was 2.951 OD470 /(min·g), significantly higher than that of other 3 treatments(P<0.05), PPO activity was 0.152DOD420/(min. g), and extremely significant difference with the other 3 treatments(P<0.01), the MDA content was0.034μmol/g, significantly lower than 2 an℃ d 1℃(P<0.05), but no significant difference with 1℃. Chilling injury symptoms appeared in-2℃,-1℃during the storage, 0 storage ℃effect was better after the comprehensive comparison.(2) In 0 condition,studying the influence of different oxygen concent℃ ration on the fig’s physiological and quality.Selecting two different oxygen concentration 2%~5%,5%~8%, respectively. On the 30 th day of storage, the decay index of oxygen concentration 2% ~ 5% treatment was 63.33%, significantly lower than other 2 groups of treatment; reducing sugar content was 12.45%,VC content was 13.21mg/100 g, titratable acid content was 0.219%, soluble solids content was 10.9%, significantly higher than the other 2 treatment(P<0.05);MDA content was 0.062μmol/g, significantly lower than the other 2 treatment(P<0.05).On the 15 th day of storage, 0 came to the respiratory peak ℃of 102.71 mg/kg·h- 1, significantly lower than the other 2 treatment(P<0.05); After the comprehensive analysis, oxygen concentration 2% ~ 5% treatment was better.(3) The ozone treatment on the fig storage, ozone concentration was 50mg/L,and treat the fig every 8 h,on the 5th day, 10 th day, 20 th day,25 th day, 30 th day of storage, soluble solids content of ozone treatment were significant difference with the control group(P<0.05); on the 30 th day, reducing sugar content was11.12%, ozone treatment group and the control group was extremely significant difference(P<0.01); Titratable acid content was 0.277%, significantly higher than that of control group(P<0.05); Decay index was 22.5%, the POD activity of 2.912DOD470/min·g- 1, MDA content was 0.050μmol/g,which was extremely significant difference with the control group(P< 0.01); PPO activity wasDOD420 0.069/ min·g- 1, significantly lower than control group(P<0.05). The results showed that ozone treatment could effectively reduce the decay index of fig, maintaining high VC, titratable acid, reducing sugar content,reducing respiration, maintaining higher POD and PPO activity, reducing the generation of MDA effectively, prolong the shelf life of the figs.The ozone treatment was better.
