Bamboo shoots are the new culms that just emerge from the ground,also shot forshoots.China is the origin country of bamboo shoots,as well as the largest productionnation. China’s annual production of bamboo shoots are more than3.2million tons.After the traditional bamboo processing,the remaining scraps shoots accounted for50%-70%of bamboo materials,these shoots residue if not utilized rational, theywould not only be a waste of resources but also would cause great pollution to theenvironment. Therefore,it has important practical significance for comprehensiveutilization of shoots residue from the perspective of environmental protection orutilization of biomass resources.To take full advantage of liposoluble components and dietary fiber inChimonobambusa quadrangularis bamboo shoot,its shoot residues was used as theraw material. Supercritical CO2extraction technology was used to concentrate shootresidues crude oil,its composition and fatty acid composition was analyzed.Aftercomparative study of dietary fiber preparation method, acid-alkali process was used asthe preparation method of dietary fiber.The results are as follows:(1) Concentrating bamboo shoot residues crude oil using Supercritical CO2extraction device,and oil composition analyzing. studied the effects of extractionpressure, temperature, CO2flow and extraction time by single factor experiment, theoptimal reaction conditions are: extraction pressure30MPa, temperature45℃, CO2flow55L/h under extraction time2.5h;Under this condition the shoots crude oilyield was4.3%.GC-MS analysis of the crude oil showed there were18components(similarity≥77%),among them β-sitosterol, Cholesta-4,6-dien-3-ol,Campesterol, Stigmasterol,9,12-Octadecadienoic acid(Z,Z),9,12,15-Octadecatrienoic acidrelative content was separately36.72%,9.51%,7.37%,5.62%,3.54%,6.67%;GC analysis showed that unsaturated fatty acid content of77.3%of the fatty acidcomposition. Among which,oleic acid content of17.5%, linoleic acid31.9%, linolenicacid25.2%.(2)Screening preparation method of dietary fiber.The simple preparation method can relatively got a higher yield,but the TDF.IDF. SDF percentage of the product wasthe lowest, indicating the purity and quality of the dietary fiber prepared by thismethod are no good. SDF content can increase by using fermentation method,showingthat dietary fiber quality has improved. However, the product prepared by acid-alkaliprocess method,the TDF and IDF percentages were higher than the other twomethods, and with the fragrance of bamboo shoots.So, acid-alkali processing methodis suitable method of dietary fiber preparation.(3) Study on the processing craft and property of dietary fiber preparation fromChimonobambusa quadrangularis bamboo shoot residues using acid-alkali processingmethod..In order to develop acid-alkali processing, effects of different processingparameters were investigated by the yield of dietary fiber using single factorexperiment. The results showed that the yield of dietary fiber was52%and itswater-holding capacity was5.19g/g, expansibility was5.72mL/g, oil holdingcapacity was7.16g/g, when the pH of alkali liquor was12.5, temperature was60℃,ratio of solid to liquid was1:10, soaking time was2h, and the pH of acid liquor was2,temperature was60℃, ratio of solid to liquid was1:8, soaking time1.5h.
