This paper reported the extraction and properties of collagen from different parts of grass carp like scale,skin,bone(the tail and bone) in method with acid, alkali,enzyme and water method,aiming at lay the basis for further studyof coll agen extracted from grass carp.Firstly, the collagen of grass carp’skin in method with acid,alkali,enzyme and water was resesarched, the result of collagen’s extraction yield in different method was as follow:acid>alkali>enzyme>water.The result of collagen’s in dif ferent method was as follow:alkali>acid>water>enzyme.The result of collagen’s SDS-PAGE electrophoresis was:the ribbonss from water and alkali appeared in β-dipolymer and y-tripolymer’s ribbons position, the ribbonss from enzyme an d acid no appearreance, butα-chain’s ribbonss from enzyme and acid marks sig nificantly thicker than ribbons from water and alkali.The result of collagen’s U V scanning spectrum was:UV absorption intensity from acid and alkali were g reater than that from water and enzyme, the maximum UV absorption left side from alkali and enzyme appeared some miscellaneous peaks. The result of col lagen’s FI-IR spectrum was:according with the characteristic absorption peak,T he collagen extracted in four methods except alkali all have characteristic absor ption peaks which are amide Ⅰ, amide Ⅱ, amideⅢ, and their position are simil ar to each other, It was in accordance with I collagen’s characteristic absorption peak.Secondly,the collagen of grass carp’s bone in method with acid,alkali,enzy me and water was resesarched, the result of collagen’s extraction yield in diffe rent method was as follow:enzyme>acid>alkali>water.The result of collagen’s in different method was as follow:alkali>water>acid>enzyme.The result of collag en’s SDS-PAGE electrophoresis was:Ribbonss from water and alkali appeared i n β-dipolymer and y-tripolymer’s ribbons’ position, the ribbonss from enzyme a nd acid no appearreance, but the number of ribbons was more than skin. Ribb onss from enzyme and acid did not appear in high formula weight ribbons and a-chain’s ribbons from enzyme and acid mark significantly thicker than that fr om water and alkali. The result of col lagen’s UV scanning spectrum was as follow:skin>bone>scale. miscellaneous pe aks from scale tended to appeared at maximum UV absorption wavelength’s ri ght side.skin’s miscellaneous peaks were less. But miscellaneous peaks from bo ne tended to appeared at maximum UV absorption wavelength’s left side. The result of collagen’s FI-IR spectrum:The collagen from different parts of grass carp fish in the same extraction method, its structure were similar and the pea ks from sacle more than that of skin.
