Our country has a huge quantity of abalone consumption and farming. Currently,Haliotis discus hannai Ino is the most common species of abalone in the market. Thefarming quantity of Haliotis discus hannai Ino in Fujian and Shandong provincesaccounted for90%of the market share. As seafood of high economic value, analysisof origins is of great meaning. Abalone viscera were the major byproduct in theprocessing. Phospholipids of abalone viscera were rich in high unsaturated fatty acids(PUFA), which could be used in functional food, however, there have been fewstudies on it. The main parts of the present study were seasonal analysis of the basiccompontents of Haliotis discushannai Ino from Fujian and Shandong provinces, andthe anti-obesity activity of phospholipids from abalone viscera. The present studyestablished theoretical foundations and scientific basis for oringinal identification ofabalone and effective development of ablone viscera. The main results included:(1) Haliotis discus hannai Ino from Fujian Province, Qingdao city andRongcheng city was used as experiment materials. The basic ingredients of abalonemuscle were detected, and the seasonal changes were analyzed. The results indicated,protein and polysaccharide were the main components of abalone muscle, both ofthem accounted for95%; lipid content of abalone muscle was low, however the PUFAcontent was over40%, and also included a certain level of aliphatic aldehydedimethyl acetals; abalone muscle was rich in trace elements, as Zn、Cu、Fe、Se、Cr、Co、Mn、Mo、V、Ni etc. The basic ingredients of abalone changed depending ondifferent areas and seasons. By the cluster analysis, the compositions of elements andfatty acids could be recognized as origin identification indexes.(2) The lipid of abalone viscera was analyzed comprehensively, includingseparation of neutral lipids and phospholipids, and evaluation of fatty acid compositions. The results indicated: PUFA, which contained over twenty carbons,was rich in abalone viscera. The major components of neutral lipids were TG, FFAand DG. Phospholipids mainly included PE, PC, PG, PI, PS, SM and LPC.(3) APL (abalone viscera phospholipids) was extracted from abalone viscera.And its anti-obesity effect on high-fat diet-induced obesity was studied. Theexperimental results demonstrated that APL could significantly inhibit body weightgain and fat accumulation in the body and showed an excellent anti-obesity effect.APL also significantly reduced the levels of total cholesterol (TC) and triglycerides(TG) in the serum as well as in the liver, and reduced arteriosclerosis index (AI). APLeffectively improved glucose tolerance. Comparing with soybean phospholipids(SPL), APL showed more positive effect on glucose and lipid metabolisms.
