Emulsion has been widely used in food, medicine, pesticide, chemical and-other fields. The hot issue in the research of emulsion is the determination the emulsion stability with simple and rapid method. In this paper, we used our designed method of illuminance meter to study the stability of the petroleum ether/water emulsion system. The main research contents and achievements are as follows:(1) The detector device of illumination meter for the determination of emulsion stability was designed. It was used to measure the stability of oil-in-water (O/W) and water-in-oil (W/O) emulsion. The results were consistent with the measurement results of turbidimeter, which indicated the illumination meter device was reliable.(2) A method which evaluated the stability of emulsion by illuminance meter method was established. According to the emulsion of light intensity mutation time and half-life to evaluate the emulsion stability and had carried on the estimate emulsion of stable time.(3) Investigated the stability of oil-in-water (O/W) and water-in-oil (W/O) emulsion using Triton X-100and Span-80as the emulsifier, respectively. Discussed the effects of mechanical mixing method, ultrasonic method and combined method (combined stirring with ultrasonic) and emulsifying conditions on the emulsion stability. The results showed that the best process conditions of the stability of O/W emulsion were:emulsifying15min, emulsifying temperature30℃, ultrasonic power480W and emulsifier1.000g. Under the optimal conditions, the prepared emulsion was more stable. Its transmitting light mutation time and half-life were5440min and5600min, respectively. However, the better process conditions of stability of W/O emulsion were:emulsifying30min, emulsifying temperature30℃, ultrasonic power240W, emulsifier1.000g. Under the optimal conditions, the prepared emulsion was more stable. Its transmitting light mutation time and half-life were3500min and4130min, respectively.(4) Explored the measurement of emulsion stability through vertical scanning using the illumination meter. The effects of emulsification time, temperature, ultrasonic power and concentration of emulsifier on the emulsion stability were studied by vertical scanning method. The experimental results were consistent with the determination results of the fixed monitoring method. Vertical scanning method provided the basis for the future device in the rapid scanning and determination of emulsion stability.
