In the20th centry80years, minimally processed vegetables came into people’s lives, due to health,safety,easy and increasingly it became the firsrt choice.However,after cutting vegetables are more perishable. At the same time, supermarket as the teriminal of the sales, vegetables has been in the light. While the existing packaging of minimally processed vegetables is very casual. Different colors and nature of vegetables are with a sigle form of packaging and Packaging materials usually used don’t have the optical block.Then the light will inevitably cause some effect on the fresh vegetables. Therefore the study on new packaging materials of minimally procressed vegetables in supermarket makes sence.In this paper, through the shelf life contrast and the nutrition components change of packsged fresh-cut broccoli stored in the supermarket light and dark condition.It concludes that the effect of light decreases the shelf life of the packaged fresh-cut broccoli. In order to reduce the effect of supermarket light on the minimally processed broccoli, it added different UV absorbers and hindered amine light stabilizer to PE film,then using this film to package fresh-cut broccoli.In the condition of supermarket light to study the change of nutrients and the effect on shelf life of fresh-cut broccoli.The main content is making different UV absorbers and hindered amine light stabilizer PE film,testing its thickness,gas permeability,light transmissionrate and other physical properties, determinating the compatibility between Hindered Amine light stabilizer and PE,observing the microstructure of the films.The PE films with different content of UV absorbers and hindered amine light stabilizer were used to package fresh-cut broccoli.Then placed them under the light of simulated supermarket. Determination of the weight loss, the internal packaging of oxygen,carbon dioxide component,the change in vitamin C, the chlorophyll and soluble solids and sensory evalution test. Experimental set of pure PE film, supermarket PP shallow tray with LLDPE packaging comparison.The result shows that adding UV absorbers and hindered amine light stabilizer separately can reduce the transmission rate of film.Adding two of them have the best light resistance. Adding light stabilizer to PE film can protect the quality of fresh-cut broccoli and extend its shelf life. Comparison of existing supermarket vegetable packaging, the study film extend the shelf life of broccoli.Through this study it makes clear that the effect of the supermarket light on the vegetable and provides a new packaging materials.
