China is the largest producer of peanut in the world, has a great peanut industry scale. Peanut cultivated area, yield and peanuts export rank among the first all over the world. Because our country is still not established peanut processing characteristics and quality evaluation system, peanut industry development is not balanced. This subject mainly tested physical and chemical index and the processing characteristics index of the collected common62peanut germplasm resources, and then evaluated peanut processing characteristics and processing suitability through the principal component analysis method to get the optimal peanut varieties which are suitable for different processing requirements. Filled the blank of peanut processing characteristics and quality evaluation system, and provided theoretical basis for guiding peanut industry balanced development.The subject tested crude fat, protein content, protein extraction yield, polysaccharide content, O/L value etc. physical and chemical index and the processing characteristics index of62varieties of peanuts samples determined the different index range change, amplitude, mean, standard deviation and variation coefficient. P eanut variety peanuts index differences are significant, and discrete degrees are obvious.Based on the principal component analysis about the physical and chemical index and the processing characteristics index of peanut, determined the9principal component, the total variance contribution rate of87.791%.
