| More and more consumers have their dinners at restaurants along with economic development, so it is paid more attention to food hygiene for safeguarding the health of the people. Food safety was worrisome since food poisoning and foodborne diseases occurred more frequently in restaurants every year in china, and also in Shapingba District of chongqing. .In order to conduct the supervision and management of food safety well, it is essential to carry out the quantitative grade administration, training and management of food hygiene license and the certification of health, the inspection of the foods and dishware, executing punishment , the handling of people's complaints and report and the disposal of food poisoning according to the national laws and regulations. The above-mentioned are important measures to prevent food poisoning and foodborne diseases, ensure food hygiene, safeguard the health of the people and promote the development of modern society, harmony society and civilized society.The paper is on basis of food hygiene law of the people's republic of China and guide of quantitative grade administration of food hygiene supervision, in consideration of current economic development and the public's demand of food safety. We conducted a lot of investigations of the situation of food safety of restaurants in Shapingba district using literature review and field survey and so on. We found some problems in the food hygiene supervision in Shapingba and some countermeasures should be pointed out to improve the food hygiene supervision of restaurants, ensure food safety in the future and provide scientific evidence for the government and superior departments.In our research, the problems in the food hygiene supervision include: 1. the poor quality of quantitative grade administration;.2. the restaurants unlicensed for food hygiene; 3. The low coverage rate of surveillance; 4. The rising number of people's complaints and report; 5. less actually executing punishment. 6. food poisoning almost occurred in restaurants every year.After our research, We get more understanding and evaluation to the situation of food hygiene supervision, with five recommendations given : 1. Strengthen the supervision of quantitative grade administration of restaurants, lower the risk . 2. Improve the cooperation system of food safety, punish those restaurants without food hygiene license. 3. Parallel the management of reward and punishment, enhance the investigation and address people's complaint and report. 4. Establish the lawful system of food safety, stand out three emphases, and execute punishment more powerfully. 5. Explore the way of"top-down"and"bottom-up", advance the effective conformity of food safety supervision system ; 6. Establish and intensify the measures for food hygiene supervision and control. |
