Banana belongs to the Musaceae of Musa. It is a tropical traditional economic crops, Itsproducing area mainly within30°between north and south latitude of tropical andsubtropical areas. In southern China,Taiwan,Fujian,Guangdong,Yunnan and Guizhouprovince have large-scale cultivation, especially in Guangxi and Hainan, they are bananaplanting province for our country. Banana contains a lot of nutrients, and loved by numerousdifferent crowd. According to FAO statistics, in2010banana cultivation area of China are413,900hectares, its production reached9.849million tons. Banana skin fruit accounts forabout30%of the weight of or so, that is in2010, about3million tons of banana skin produce.Banana skin polyphenol content is about1.02%(dry base). The banana skin polyphenol asanti-oxidation, aging and so on many kinds of physiological and pharmacological activities.Use banana leather take high purity of banana skin polyphenol, not only can reduce pollution,but also can create economic benefits. For plants at home and abroad of polyphenolsapplication research introduces more, the corresponding technology has more mature,however as extracted from the banana skin polyphenol, the related research is not a lot, so forthe banana skin polyphenol research and very large space, and discussed in this paper.In present the banana skin of polyphenols extract some research. The results show that: microwave vacuum drying andvacuum freeze-drying banana skin Browning level is far lower than the hot air drying.Banana skin total phenol in the best extraction process conditions for: material liquid than1:20(g/mL),60%ethanol solution and70℃conditions ultrasonic (fixed power120W) role40min, total polyphenols highest extraction, banana peel the extraction of total amount ofphenol to36.95mg/g (dry base). Finally the polyphenols extract banana skin to lard andsoybean oil antioxidant properties, and the results showed that the banana skin to the ethanolextracts oil powder peroxidation has better inhibition action, in a certain range, antioxidanteffect with the increase of adding amount of increase, and ethanol extract antioxidant effectthan vitamin C.
