Spirit's quality is defined as liquor sensory quality and physicochemical quality, their formation is primarily in liquor aging period, but aging period need to take a very long time in general.This article refers to the main purposes of liquor aging uses infrared technology to greatly reduce the liquor during the aging time and improve the sensory quality and physical and chemical quality of liquor, so as to significantly improve the economic efficiency.The main contents of this article is based on infrared spectroscopy and molecular of organic chemistry, by infrared spectroscopy in the definition of fundamental frequency absorption, molecular vibration modes and various organic molecular characteristic frequency concept, combined with process of wine's physical chemistry, established artificial IR theory of promoting liquor's aging. And we design and manufacture a manual infrared promoting liquor's aging device based on this principle, and use this device for the experimental operation, the test samples sent to the physical and chemical analysis laboratory of Yushuqian wine ltd., Detection of physical and chemical quality of liquor content and then through the content of the finished wine compared, by comparing proof infrared aging technology feasibility; final sensory analysis is determined by a taste of views the master workers of Yushuqian wine ltd. gives.
