The first part of this dissertation is the design and synthesis of new analytical reagents which could recognize the surface of protein according to the number of histidine on the protein surface. The recognising group in the reagents is the iminodiacetic acid (IDA) side chain which could form complex with metal and imidazolyl group on the surface of protein. Nine compounds were designed and synthesized and 11 compounds synthesized already, but not purification yet.The second part of this dissertation is to study the detoxication mechanism of preparing process of Kansui. Compare the chromatograms of raw and prepared Kansui. The result shown that a major constituent dereased 18.5 times after preparation process. Then the major constituent was isolated and purified guided by the HPLC. The major constituent was euphol which determined by the NMR, MS, and IR. Therefore the euphol was resposible for the toxic effect of Kansui and its content was decreased after preparation process.
