Furfural is one of the aroma substances in the liquor. Furfural can be detected from the most representative of the three-flavor (of Mou-tai,Lu-zhou,Fen) liquor in china.The OD277 value of furfural content from the three-flavor Liquor was measured By UV spectrophotometry in this paper. As a result, we found that furfural content from the Mou-tai Liquor was significantly and the longer in the year, the higher in the furfural contents. The study about fermented grains of mou-tai liquor indicated that its content of furfural was significantly higher than other kinds of liquor.Live Yeast Cell Derivative (LYCD),a kind of protective substance which could increase celluLar respiration and wound healing,was produced by living cell response to a controlled injure. LYCD was extensively used in cosmetic and pharmaceutical fields. This paper chose furfural as a source of stress and looked for the best condition producing highly active LYCD after stress. From the single factor and orthogonal experiments, we found the best condition: the concentration of furfural is 0.30 mL/L, time is 15 min.This study also withdrew the total RNA of yeast cell by stressing on condition that the furfural was 0.3mL/L and lasted 15min, and carried on the examination to its quality and the density. Then RT-PCR reaction and extension and increase of cDNA was undergoing with PCR probe. Finally HSP70 gene expression was analysed through the agarose gel electrophoresis. As a result, the amount of HSP70 gene expression was increased markedly after furfural stress.
