With the accelerated pace of life,chilled fish products will gradually become theimportant form of fish products.Studies on detection of harmful objects in fishproducts at present were mainly concentrated on the fresh fish products,and theresearch of detection of chilled one was still rarely be reported.In this paper,Chloromycetin was detected with the method of ELISA, HPLCand GC-ECD in the samples of chilled fish products.The results showed that,compared with the method of ELISA and HPLC,the one of GC-ECD owned thefeature of high recovery,high sensitivity,high stability,and low detection limit. Itwas suitable for detecting chloromycetin of chilled fish products,and the detectionlimit was1.96ng/g,RSD was1.58%-5.48%,recovery was90.93%-105.25%.Theparameters characteristic of heavy metal content was studied by atomic absorptionspectrometry in chilled fish products.The results showed that,the content of Cu,Cd,Cr,Pb in chilled fish products could be detected effectively.The lowest detectionlimits were0.0049μg/mL,2.839ng/mL,21.182ng/mLand9.876ng/mL;RSD was8%or less;recovery was over82%.The pretreatment-conditions of GC-ECD was optimized that the spiked standardsolvent was water;extraction column was C18solid phase one;the method ofactivating the extraction was adding5mL methanol,5mL chloroform,5mL methanol,5mL water in order;the eluting agent was methanol with the amount of2×2mL; thederivative environment was in oven;the derivative temperature was70℃;thederivative time was25min.Under the optimum conditions,the recovery was reachedbetween118.8%-120%, and the value of RSD was between0.12%-0.96%.Based on the optimized detection,the content of chloramphenicol and heavymetals was studied in chilled fish products.The results showed that it was differentamong various fish products.For the content of chloramphenicol,the belly of fish wasthe highest,which content reached18.156±4.337μg/kg,and the one of skin,muscles,the spine was low levels,was not detected.The sites of enrichment of heavy metalswere mainly in liver and fins.The content of Cu,Cd,Cr was the highest in liver,which reached2.725±0.198mg/kg,41.658±1.345μg/kg and0.265±0.002mg/kg,andthe one of Pb was highest in fins,which reached63.442±2.818μg/kg.The content ofheavy metals in muscles,belly,skin was also different among different batches.Forexample,the residual content of Cu fluctuated between0.102±0.001mg/kg to1.898±0.103mg/kg.Overall, the content of heavy metals could adapt to the demand of detection in the actual production,within the scope of the national standard.Thereason need to study that the content of Cu,Cd,Cr,,Pb fluctuated irregularly inchilled fish products at different storage time.And muscles,belly and skin of fishproducts weren’t detect chloramphenicol at different batched and storage time.The research of this paper provided a basic method for the hazards detection inchilled fish products,and the changes of hazard were studied in chilled fish productsin different batches and different parts,which laid a certain foundation for buildingthe detection method of hazards in cold fresh fish products and studying the changingregulation of its hazards....
