This experiment researched the relationship between the dielectric characteristics and maturity index of Cheddar cheese. The purpose was to find the correlation between cheese maturity and dielectric properties. During cheese ripening1d,7d,15d,30d,45d,60d,90d, measured the dielectric properties, texture indicators and indicators of Cheddar cheese, analyzing the relationship between dielectric constant and maturity.The results were as follows:(1) In the test of TPA, both cohesiveness and springness, hardness and chewiness, gumminess and hardness, gumminess and chewiness had a highly significant correlation.(2) Cheddar Cheese stress relaxation properties could be expressed by the regression equation of y=a-b*ln (x+c), the correlation coefficient were greater than0.994.(3) The dielectric constant could be expressed by the polynomial equation Y=A+B*X+C*X2+D*X3, the correlation coefficient was above0.93; the dielectric loss factor could be described by an exponential equation y=A*exp(-X/B)+C, the correlation coefficients was above0.987.(4) During the maturity1d to60d, the dielectric properties in a specific frequency had a good linear correlation with cheese maturity index, the correlation above0.9, but in1d to90d was lower than0.6.(5) The pH4.6-WSN and12%TCA-SN content were showed an upward trend in mature period, in which the pH4.6-WSN content did not change significantly, while12%TCA-SN levels change significantly (p<0.05).
