With the improvement of people’s living standard and increasing demand for squid,squid fishing production is also growing in China. Large amounts of waste will beproduced in the process of squid processing, such as organs, skin, etc. These scraps notonly didn’t get to be useful, but also polluted the environment. In order to realize the highvalue utilization of resources and alleviate the crisis of environment, a comprehensiveutilization technology was developed using squid viscera and fish oil, taurine and peptoneas product.The basic nutrient composition of fresh squid visceral was determined. The moisturecontent is29.70%, fat content is34.30%, protein content is31.70%, and the ash content is2.61%. Higher content offer fat and protein implied it could be used as good material ofpeptone and oil.The comprehensive utilization technology of squid viscera was determined, fish oil,taurine and peptone will be produced, and effectively reduce waste emissions.The technology was optimized to extract crude fish oil from squid viscera usingenzyme hydrolysis method The enzyme hydrolysis extraction of fish oil is optimized bythe single factor test and orthogonal test as following:, extracting temperature55℃,enzyme dosage of1800U/g, solid-liquid ratio of1:20(m/v)and extracting time of6h.Under this condition, fish oil extraction rate reached85.91%. The acid value of fish oil is170mg/g and contained91.59%unsaturated fatty acids in the total fatty acid, with10.05%EPA and1.44%DHA, respectively.Taurine was extracted from squid viscera residue after oil extraction. The optimizedcondition was extracted at60℃with60%ethanol at solid-liquid ratio of1:15(m/v),extraction time was20min. Under this condition,1.41%extraction rate of taurine wasachieved. Purified with ion exchange resin,1.28%pure taurine was obtained.Peptone was prepared with enzymatic treatment of squid viscera residue. the optimalconditions was r enzyme dosage of1800U/g, hydrolysis temperature65℃, pH of7.0,hydrolysis time of3h, solid-liquid ratio of1:20(m/v). Under this condition, the protein yield was50.43%.In this study, a comprehensive utilization technology of squid viscera was determinedto get fish oil, taurine and peptone, fat, protein and other nutrients in squid viscera wasfully utilized and no new waste was produced. This comprehensive process not only madefull utilization of resources, but also reduced environmental pollution; a win-win goal wasachieved.
