Food-borne disease is the infected and toxic disease that is caused by the food eaten in human body. Every one is in the risk of food-borne disease. In the present the food-borne disease caused by microorganism hold precedence in the factors caused food-borne disease. Recently World Health Organization reports that every year the lax case history reaches 15 hundred million all over the world, which cases millions of young people died, in which 70 percent of case history is ascribed to the food contaminated by various microorganisms. To build and improve the food contamination detecting web can effectively collect the information on food contamination, which is of great benefit to develop fatalness evaluation that fit to our country and build food contamination warning system. That can protect the health and benefit of consumer, and at the same time can improve our country status in international food trade. The food poisoning in our city are mostly present in food material contamination, crossed contamination caused by the mixture of the cooked and crude process food, lively bacterial number over normal value caused by seafood, improper food conservation, and so on. We found that the incidence of food-borne disease increased due to the increasing people who eat crude seafood and seafood not heated drastically. The bases to judge bacterial food-borne disease mainly include epidemiology investigation, latent period and special toxic behavior of patient, and laboratory diagnosis. Laboratory diagnosis is to ensure food-borne disease. According to laboratory diagnosis results of 68 cases of bacterial food poisoning in three years, the hazard analysis of food-borne disease is made, and the crucial control point that can reduce and control disease explosion is found out.The scopes of investigation and the examination bases are as follows:1. Find out the potential and occurrent biologic contamination problem in food, perform hazard evaluation, and pay attention to the emanation and explosion of seasonally food poisoning and arising of outburst food-borne disease.
